Where Coffee Inspires Pastry
At Tenfold, we love highlighting exceptional coffees. That’s why we’re teaming up with Reforma for a limited weekend collaboration pairing Tenfold’s newest Iconic coffee - Caturron - with a pastry designed specifically for this cup by pastry chef Micaela “Miqui” Victoria. Drawing on the natural wine, dark chocolate, and floral notes in the coffee, Chef Miqui crafted a 66% Dark Chocolate Basque Cheesecake with raspberry and lychee confit. Served by the slice, with a pourover of Caturron.

Their amazing team taught us so many cool things!
We got to experience the Coffee Analytics Lab, where we saw the GC-MS/MS and LC-MS/MS instruments in use as Dr. Stephen Talcott and Eric Brenner are running coffees from Panama through to map out their chemical composition for the World of Coffee Panama competition.
We left more convinced than ever that the future of specialty coffee lives in this overlap!
Huge thanks to the TAMU team for opening their lab to us, and we can’t wait to see what comes with the Aplin Center.
