Goodmorning!
Mommy & Me breakfast:
We had eggs scrambled w/ broccoli, avocado, & greens. We are obsessed with avocado so we had more on the side, plus an ‘everything’ bagel w/ strawberry cream cheese. Leilani loved it, she thought it was fun to find the avocado in her eggs 🙄 lol
Getting my toddler to eat healthy is probably a lot easier than most, i raised her this way! She sucked on watermelons and mangos as a newborn. (Probably not advised by most physicians but i believe exposure is really important in building early immunity to prevent allergies)
But these are some of her faves, avocado toast w/ toasted sesame seeds; hummus w/ ; pineapple; and broccoli (dipped in hummus). Try some out on your little one and you might be surprised!

This is what I call vegetarian comfort food.
Spinach & sun dried tomato stuffed mushroom caps. I actually found these pre-made at Walmart and was pleasantly surprised. I baked them, put them on top of spinach and arugula & sprinkled it with garlic powder. Soo yummy 😍

Found this old picture of a meal prep i did for a coworker.. salmon, sweet potato wedges and my favorite fruit salad 🤩 i HAVE to make this soon

The spaghetti squash i bought at the garden center earlier this week. It came out pretty good.

Lentil mushroom and pecan patty bean burger w/ a portabella cap, arugula, caramelized carrots, horseradish aioli on a whole wheat sesame bun 😍🤤 omgosh it was so good and definitely filled my craving for a burger. Plus i got the immunity boost juice w/ Apple mint lemon ginger & cumin for my runny nose. I’m not eating anything else today 🤥 @ TOUT SUITE

Colors 😍 I made soup w/ these veggies plus potatoes & garlic/onions. I used almond milk, and a low sodium veggie broth for the base
