The cooking journey began with helping mom make chocolate cookies at age 7 at our home in NJ. My food journey is always be pushing forward, experimenting. Smoking food has helped out in my other businesses (buy / sell side / advisory middle market), restoring diesel engines / fleets via H2 as a PM & a fuel catalyst). My focus on Crazy Earl's is doing something different as a small batch craft BBQ.

Just arrived.
Made in Texas. 875 #
There are two levels allowing for direct / indirect.
Using the deeper level provides lots of height for regular items to larger such as a pig.
Will break this in tomorrow.
First smoke will be bacon next weekend.

We have 7 # tsunami pastrami, including 3 # flat and 4 # point, brined for 3 weeks.
Additionally, we offer 14 # of smoked beef brisket (5 # flat; 9 # point), with a dramatic impact on the flat due to reinjected smoked beef tallow for extra yumminess.
To complement our meats, enjoy 3 packages of 2 # no preservative smoked craft bacon sliced at ¼”.

The inspiration for the 1/4” bacon steaks is via a long time friend in Childress TX.

Somehow backyard craft bbq turns out pretty good.
This is (beef cheeks). It is vacuum sealed in 1 # packages. Always a treat.
Picked up a quart green sauce from my local favorite taco place for $10. All I did was ask and bam - it is really the bomb.
Good combo.

Before sunrise smoked 20 # bacon.
Then tried my hand at smoked pichana.
These were over direct heat.
The aroma is off the charts.

Will be selling at least 1 of these Pitts & Spitts Smokers.
They have a small footprint and no “nuclear zone” as the firebox is underneath.
New with tax + shipping high $3k.
These will will about $549 each.
The replacement will by the “smoke slinger.” This allows for smoking, direct heat and perhaps to smoke a whole pig!
