This past weekend RJS Catering HTX had the opportunity to serve our largest catering to date, (450) people. Thank you Houston Livestock Show and Rodeo - Industrial Craft Competition Committee for having us serve your awesome event/picnic!

I consider myself a “TACO ENTHUSIAST.” I know I can make a mean effing taco. This is t about me… I finally went to Tacos Frontera and it did not disappoint. Hands down some of the BEST tacos I’ve digested in a very long time. They are know for their “Tijuana Style” tacos… Carnes de asada! Meats off the grill (for my gr**go friends). I had the tacos de asada and you can taste the parrilla in the tacos with the homemade corn tortillas and salsita! They started by bringing me there salsas with chicharones… and I swear I teared up a little bit. lol. The frijoles charros were perfectly made. They even put the little slices of the salty hot dog wieners in them (like I do). I was impressed.
Go there. Eat. And go back again. Talk to the owner Erik and hear his story about the passion for GOOD SIMPLE TACOS. We need more and more of OUTER LOOP FLAVOR in HTown.

“The Double Smasher.”
This burger took me (3) years to perfect. I started making them in my down time when I was working at an assisted living facility. Trying all different kinds of combinations, spices, buns, sauces, condiments… you name it, I can almost guarantee I tried it on a burger…. But nothing was hitting. Nothing was “WOWING” me. Then one day (true story), I was watching “Apollo 13” and that scene where Ken Mattingly had to build a CO2 filtration system from parts onboard the shuttle so the astronauts could breathe and survive… I started to literally think how I could deconstruct and then re-construct a killer burger… the answer was simplicity. Simplify the ingredients so when you take that first bite nothing overpowers any other flavor and it all works together harmoniously. Hence, all the parts Ken used to build the CO2 filter were all simple parts (parts of the shuttle) and it worked. I know, crazy story. But that’s how this burger came about.
I remember starting out (about 1.5 years ago) prepping 12 burgers for the night for service. Now, I’m prepping 60-70 and selling out. It’s ramping up. I have people coming to Triple Crown Bingo and asking for me and/or the burger. And, ain’t gonna lie… that’s a cool feeling. To know you hit someone in the EFFING gut with a punch of bad ass flavorful food is an EPIC win in my recipe book.
Sorry, not sorry for the history, “E true Hollywood” bio on this burger, but when you can feel you got something good… like Mikey wrote in “The Bear,” you LET IT RIP!

150-175 tacos al pastor & quesa birria tacos,cabrito & Mariachis! RJS Catering HTX accomplished some thangs this weekend! So happy the way this party turned out! Everything was perfect! The food, the people, the atmosphere… it was my last official “booked”catering for 2022 and I must say we went out with a BANG!!!
