Chocolate Mousse Cake Recipe
Ingredients
For the Chocolate Sponge Base:
3 large eggs (separated)
50g granulated sugar (divided)
30g all-purpose flour
15g unsweetened cocoa powder
15g unsalted butter (melted)
For the Chocolate Mousse Layer:
150g high-quality dark or milk chocolate (chopped)
250ml heavy whipping cream (chilled)
2 tbsp whole milk
1 tsp gelatin powder + 1 tbsp cold water (optional, for a sturdier set)
For the Topping & Decoration:
Fresh strawberries (cut in half or left whole)
2 tbsp strawberry jam or clear glaze (warmed)
1 tbsp unsweetened cocoa powder (for dusting)
Step-by-Step Instructions
1. Bake the Sponge Base
1. Preheat your oven to 180Β°C and line a 7-inch springform cake pan with parchment paper.
2. Whip the egg whites with half of the sugar until stiff peaks form. In a separate bowl, whisk the egg yolks with the remaining sugar until pale and thick.
3. Gently fold the yolks into the whites. Sift in the flour and cocoa powder, folding gently to keep the air. Stir in the melted butter.
4. Pour into the pan and bake for 12β15 minutes until a toothpick inserted comes out clean. Let it cool completely inside the pan.
