Started with a base of a mozzarella roll then added:

• Mustard mayo
• Roast beef dunked in au jus
• Brie
• Sautéed onions
• Parsley
• More au jus

Started with a base of a generic “sandwich cheese” roll then added :

• Garlic aioli
• Crispy bacon
• Beef tomato
• Fried eggs
• Crisps
• More aioli

Smoked Beef Rib Toastie 🫡

We start with a base of a mozzarella toastie then add:

• Homemade chimichurri
• Smoked beef ribs
• Proper meat sauce
• Mozzarella sticks
• More chimichurri
• Flaky salt

Myself, chef and the good folks at have put our heads together to bring you some of the best sandwiches to ever grace the city of Dublin.

The first of which is this Smoked Beef Rib Toastie with my signature mozzarella sticks.

We’re so confident in the tenderness of the beef you’ll get the toastie with the bones in and you pull them out yourself. It’s just more fun.

It will be available on the lunch menu starting on Thursday the 12th of September so get yourself down and grab yourself a proper Bitta Banging 🤝

Knife Bag 🫡

I remember seeing this knife bag at the open day 2 years ago and I haven’t stopped thinking about it since.

All the knives are either Dumas or Sabatier - two top brands when it comes to knife making. All the rest of the equipment is of the highest quality too.

I’m not over exaggerating when I say I love this knife bag and I will protect it with my life 🤝

• Homemade chicken cutlets
• Homemade vodka sauce
• Mozzarella
• Beef tomato
• S+P
• Fresh Basil
• Extra virgin olive oil
• More vodka sauce

Korean Hot Honey Fried Chicken Sandwich 🫡

We start with a base of a mozzarella toastie then add:

• Coleslaw with kewpie mayo and gochugaru
• Buttermilk fried chicken thigh tossed in a gochujang honey
• Fresh spring onions
• Fried pickles
• More hot honey

Myself, chef and the good folks at have put our heads together to bring you some of the best sandwiches to ever grace the city of Dublin.

Surly you didn’t think we were done - we’re just getting started. This one definitely packs a punch but my god it’s special.

This little hottie will be available on the lunch menu starting on Monday the 30th of September so get yourself down and grab yourself a proper Bitta Banging 🤝

Day in the Life 🫡

Its protein week here at and today we had skirt steak with a confit shallot, mustard and beef jus condiment, pan seared lettuce hearts and a lemon vinaigrette.

This was my first time trying to film during class so bear with me while I figure out the kinks and what works best. This one was a bit tough due to my phone running out of storage then battery within 10 minutes of each other.

• Dijon Mayo
• Fried ham with melted edam
• Pickles
• Crispy onions
• More Dijon mayo
