We grind a variety of organic, local and regional whole grain berries fresh for our bakes- each loaf contains a unique portion. In our little , it takes more time as multiple passes are needed for the correct texture. We feel the complexity, balance and flavor this adds to our artisan loaves is worth it!
Enriched flour is highly processed grain, stripped of important vitamins and minerals. This is why they must be added back in synthetically (see our previous post on folic acid.) Our bodies do not process synthetic ingredients the same way they are able to absorb naturally occurring nutrients- choose your ‘fuel’ wisely! We use ONLY , unenriched, grains in our loaves and treats!

Folic acid, found in many commercial flours, breads, cereal and packaged snacks is a synthetic version of folate.
