We're honored to present #14582 Noguchi Hiyaoroshi Muroka Nama Genshu โ€” the autumn limited 2025 vintage from the Noguchi Naohiko Sake Institute in Ishikawa prefecture, Japan.

The man behind the bottle:
Master Brewer Noguchi Naohiko is known throughout Japan โ€” and the sake world โ€” as "the God of Sake Brewing." In his eighties and still working tirelessly every day, Noguchi's career spans more than seven decades of unmatched craft. In 2017, the Noguchi Naohiko Sake Institute was founded with a singular mission: to immortalize his techniques, mentality, and vision โ€” passing his wisdom to the next generation of brewers who work alongside him each day.

What makes this sake extraordinary:
This is sake in its purest, most uncompromising form โ€” three "no"s that define its character:

๐Ÿšซ Muroka โ€” Unfiltered: nothing removed, nothing hidden
๐Ÿšซ Nama โ€” Unpasteurized: alive, vibrant, and raw with natural character
๐Ÿšซ Genshu โ€” Undiluted: full-strength at 19% ABV, exactly as it left the tank

The Hiyaoroshi process:
Spring-pasteurized once, then left to sleep and mature through the summer in the cool of the brewery โ€” only released when autumn's chill arrives. A tradition as old as Japan itself, delivering a sake of extraordinary depth and harmony.

Tasting notes:
The palate opens with a full, rice-forward aroma, vibrant sweetness and bright acidity, with a pleasantly lingering bitter finish. Best served warm at approximately 40ยฐC, where the synergy with food reaches its full potential.

๐Ÿ‚ Autumn has a sake โ€” and it only arrives once a year.

We're honored to announce the arrival of #14852 Kikusui Hiyaoroshi Junmai Ginjo โ€” the 2026 autumn limited release from Kikusui Sake Co., one of Niigata's most storied breweries, founded in 1881.

What is Hiyaoroshi?
Hiyaoroshi (ๅ†ทๅธใ—) is a centuries-old Edo-era tradition. Each spring, fresh sake is brewed, then left to rest and mature quietly in the coolest part of the brewery through the summer โ€” sleeping, deepening, evolving. Only when the chill (Hiya) of autumn arrives does the brewery finally release (Oroshi) it to the world. The result is a sake of exceptional harmony: round, lively, and perfectly balanced, with beautiful notes of rice, honey, and roasted nuts.

The name Kikusui itself tells a story โ€” it references a Noh theatre play in which the dew (Sui) from chrysanthemum (Kiku) petals grants eternal life. For over 140 years, that dedication to craft and meaning has defined every bottle they produce.
