Nope, not lemonade!

Leaf lard! We still had a freezer partially full from two pigs we had processed two years ago. 😳 Most of what was left was fat back and leaf lard I have put off rendering. Since we have to pick up another pig we grew out from the processor in a couple days, it was most definitely time to deal with all of that fat! The fat back renders down into a lard I use to fry, season our cast iron pans, and even make a savory pot pie crust. Leaf lard is often loved by bakers because of its neutral flavor and is perfect for flaky pie crusts and pastries. I do plan on trying my hand at soap making with some of the leaf lard too, though!
