Quick Leftover Chicken Curry Bowl Recipe
This was part of a rotisserie chicken and some a few pieces of diced chicken breast, 9 oz total and some left over rice.
One 12 oz container of Soup Mix from my local grocery. It's made of chopped celery, carrot, yellow onion, parsnips and leek.
Sautéed the veg with a bit of olive oil. Then added some vegetable broth, the chicken and left over rice and spices. I used curry, could substitute chilly or any thing else. Heated it for about 5 minutes.
Made 2 servings. 29g Carbs, 41g Protein and 16g of fat. 349 calories
