What's everyone having for dinner tonight?
I smoked a pork shoulder and shredded it. We had pork street tacos with taco rice.
There were leftovers so I get to come up with something to make with them for tomorrow night dinner lol.

Made some cookies for the hubby and kids today. As well as put some dough in the freezer so I can have some to bake on the days I dont really want to but they want a treat. Peanut butter and oatmeal scotchies with raisins. I pre-freeze the dough so that I can vacuum seal them to keep in the freezer. I right the temp and cook time directly on the vacuum bag. I will probably freeze a few of the already baked cookies too so that I can just toss them in the lunch boxes.
Peep the towel under the cookie sheet. I is a cool damp cloth that I put the cookie sheet on directly out of the oven. Its a trick I was taught years ago to cool the pan and stop the baking process so you dont end up with over cooked cookies.

So I made a big pot roast yesterday for dinner and had a bunch of leftovers. So some of it went to my in-laws for their dinner tonight and I decided to make a pot pie with the rest of it. Well it turns out I could only use half of the leftovers for the pot pie. The other half will be Fridays dinner served over either pasta or rice. The hubby will get to decide that one. But one simple pot roast turned into 4 different meals. We are all about frugal living over here and that pot roast definitely fit the bill.

My pot pies definitely aren't beautiful but boy is it ever good with the flaky crust and home raised beef.
