Sausage-Spiced Cauliflower Steaks
A quick spice blend of roasted fennel seeds, black pepper, and orange zest lend a sausage-like flavor to these roasted cauliflower steaks—without the meat. Browning the cauliflower before adding the toppings and melting the cheese ensures a tender, sweet, and nutty bite. Be sure to flip the cauliflower during roasting to ensure there are plenty of caramelized florets under the marinara and melty cheese.
Sausage-Spiced Cauliflower Steaks Recipe This Sausage-Spiced Cauliflower Steaks recipe gets its flavor from fennel seeds, orange zest, and marinara sauce. Get the recipe from Food & Wine.

Is there anything quite as sublime as perfectly pan seared scallops? A staple of many fine dining restaurants, both as an appetizer and an entree, it's a simple dish that can be made at home, though it can be tricky to execute well. The key is that perfect sear, which gives the succulent mollusks a delicious caramelized coating. But getting that sear can be difficult, if not downright impossible, if you're buying your scallops from your local supermarket.

Your Scallops Will Taste Better With One Simple Step That simple step is to brine your scallops first. Brining helps to even out the flavor of wet scallops while removing the chemical taste from the STP.

Here's the Secret to Organizing Your Recipes
I live at the base of Cookbook Mountain. It's a teetering stack (OK, stacks — like a range the size of the Rockies) of volumes including spiral-bound Junior League collections, vintage recipe pamphlets, monographs on the glories of okra, and chef manifestos so weighty they could double as a duck press. There are cookbooks everywhere in my apartment, loosely categorized in a way that would make the librarian nuns of my Catholic school youth once again sentence me to scribbling the Dewey Decimal system on the chalkboard until Judgment Day. Would they think this chaos was a waste of perfectly useful and educational volumes, not to mention space that could have been used for I dunno, a sad clown painting collection or walking through my apartment without tripping? No way on earth I'd actually know what was in all those pages, let alone use them for their intended purpose, right?
Here's the Secret to Organizing Your Recipes Eat Your Books is the key to unlocking the contents of your cookbooks, using your food magazines, and saving online recipes (and your own) in one place.

If you like pot roast, you're in luck. The internet houses a virtual trove of recipe variations that cater to the myriad tastes that make our palates unique. Many call for soup mix (such as this one from The Spruce Eats), some for ranch dressing mix and pepperoncinis (like this Mississippi pot roast from Belle of the Kitchen), and there's even one suggesting you bathe your roast in a bottle of beer and a shot of whiskey (via Just a Pinch). But we've got an unexpected, at-times polarizing ingredient that we're sure will win over even the most skeptical of diners: ginger snaps.
The Secret Ingredient That Will Change Your Pot Roast Forever Looking to add more flavor to your pot roast? This unexpected ingredient will change your pot roast and win over even the most skeptical of diners.

One of the five French "mother sauces," béchamel is a rich, creamy component of dishes like lasagna, croque monsieur, moussaka, and savory cheese soufflés. All the best foods, really.
Made with three ingredients—a roux of equal parts flour and fat (usually butter), whisked with milk—the smooth white sauce has myriad uses on its own, or as a building block to make other sauces. Adding grated cheese makes a mornay sauce, for example, which in turn makes for a mean mac and cheese.
