Fried Tilapia (like Long John Silvers)
Ingredients:
(Batter)
2 cups club soda or carbonated mineral water
1 cup flour
1 cup cornstarch
1 tbsp baking powder
1 teas baking soda
1 tbsp salt
2 tbsp malt vinegar
(Other)
12 pieces tilapia, cod or haddock (Any fish)
Deep fried in large pot of canola oil

Chicken, Bok Choy, Carrot Stir Fry
Ingredients:
2 chicken breasts
7 carrots
3 larger bundles of baby bok choy
1 1/2 cloves of garlic
1 small onion
1/2 jalapeño
Soy sauce, salt, pepper, ground ginger, red pepper flakes
Grape seed oil
Butter
2 tsp corn starch
Cube chicken breasts in desired size. Place in large bowl with chopped garlic, seasoning, soy sauce & corn starch. Marinade for 1 hour. Rinse of cabbage well and peel carrots. Chop all veggies and have prepared. In large skillet over high heat place 2 tbs oil, onions and carrots. Stir and cook for about 6 minutes or until desired consistency (i like mine crunchy). Add seasonings. Add garlic. Add bok choy. Cook for additional 5 minutes. Add 1 tsp butter and a little soy sauce before taking it out of pan. Place more oil and add chicken. Cook for about 6 minutes or until done (i had to keep adding oil because it was sticking to the pan). At the end add a dab of butter and more soy sauce. Taste and season.
This is good served with white rice. Enjoy! 😉 ❤️

I just made the best spaghetti ever with the ingredients I had on hand. I didn’t have enough ground beef so I added chopped up pot roast (along with 3/4 cup of the pot roast juices,celery,onion)to the sauce along with 1/4 pound of breakfast sausage. I put 3 tomatoes, 1 onion, 1/2 garlic bulb, 2 cans diced tomatoes, 3tbsp tomato paste, 1 tbs Italian seasoning,garlic & onion powder,black pepper,red pepoer flakes,1 tbs red wine vinegar, a tbs brown sugar. I simmered the onion,fresh tomatoes & garlic first in butter then added the other sauce ingredients. I blended it with an immersion blender. I cooked the meats separately then added them afterwards. I cooked this on low for 3 hours. Yummy to the Tummy!!!😘❤️

Easy 3 ingredient diy crumble cookies
Ingredients:
1 box cake mix (I used FunFetti)
2 eggs
1/2 cup vegetable oil
Frost with any type of store bought frosting or homemade buttercream
Combine ingredients in large bowl. Place balls of dough on a cookie sheet.
Bake on 350° for 10 minutes. Take out of oven and let completely cool down before placing frosting. Enjoy! 😉

Spicy Bean Dip & Tortilla Chips
Sautéed onions in avocado oil in saucepan. 1 small can jalapeños (undrained) , 1 can refried beans , chili powder, cumin, onion & garlic powders, beef boullion, pepper, white vinegar, tomato paste (tiny bit),sugar (tiny bit),hot sauce
I used emmersion blender on veggies before adding beans. Grated cheddar cheese inside and on top. In oven for 20 minutes on 375°.
Homemade flour tortilla chips. Cut flour tortillas as desired. Heat vegetable oil in large skillet over medium heat. Cook for approximately 2 minutes on each side. Place on drying rack or paper bags and add salt.

Beef & Cheese Enchiladas
Ingredients:
12 corn tortillas
Sauce:
7 dried Pasilla chiles & 1 Guajillo chili
1/2 onion
3 garlic cloves
1 can green enchilada sauce
1 tbsp tomato paste
1 tsp salt
1/2 tsp beef bouillon powder
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp black pepper
1/2 tsp paprika
4 cups water
Filling:
1 pound ground beef
1/2 pound grated cheddar & mozzarella cheese
1/2 onion
1 can cream of mushroom soup
1 can green chilis
Chili powder,paprika,cumin,pepper
Top:
1/2 pound grated cheddar & mozzarella cheese
Preheat oven to 350°. Take seeds out of dried chilis and place them in a large bowl of 4 cups hot water. Add all sauce ingredients into blender with 4 cups hot water from bowl.
Grate cheese.
In large skillet brown ground beef with chopped onion,drain, add remaining filling ingredients. Set aside.
Wrap corn tortillas in wet paper towels and microwave for 1 minute.
In casserole dish pour 1 cup sauce onto bottom. Roll each enchilada making sure entire tortilla is covered in sauce before rolling (might have to add more sauce throughout rolling). When finished rolling, add sauce and cheese on top. Bake on 350° for 30 to 45 minutes or until bubbly in middle. Enjoy!

Easy (Fool Proof)Artisan Style Bread
Ingredients:
3 1/2 cups ap flour
1 1/2 cups warm water
1 package instant yeast
2 tsp salt
2 tsp sugar
Combine water,yeast and 1 tsp sugar in bowl until bubbly (about 10 minutes). In large bowl add flour,salt,sugar and yeast mixture and stir until combined. Cover and let set for 4 hours.
Place dutch oven in 425° oven for 30 minutes. Place dough onto floured parchment paper with flour on hands. Form dough into ball and dust with flour and cut slits on top. Place both bread and parchment paper in hot dutch oven. Bake 425° covered for 30 minutes and then uncovered for 5 minutes. Let rest on rack when done. Wait until completely cooled to slice. Enjoy!❤️

Supreme Pizza (This recipe makes two thin crusts)
Dough:
4 cups ap flour
1 tsp salt
1 tsp sugar
1 packet active yeast
1 1/3 cup warm water
2 tbsp extra virgin olive oil
Sauce:
1 jar crushed tomatoes
2 garlic cloves
Basil,salt & pepper
Olive oil
Toppings:
Pepperoni,mushrooms,spinach,onions & green bell peppers
mozzarella & cheddar (about 1 cup each per pizza)
Sprinkled dried basil and on top
Prepare dough by mixing everything together and kneading for 10 minutes. Cut into two balls and place in two separate oiled bowls with cover on them. Let rise on counter for two hours then either place in refrigerator for later use or use right away. Form into crust on baking sheet and add sauce and toppings. Place in preheated 500° degree oven for 10 to 12 minutes or until edges turn golden brown.
To prepare sauce, sauté garlic in olive oil and add crushed tomatoes with seasonings.
