Met with a private chef client in Potomac, MD this week to plan an upcoming in-home dinner, and stopped at one of my favorite local spots, Boulangerie Christophe.

If I’m in the Potomac area meeting clients, this is an easy choice for coffee, pastries or lunch.

The Croque Monsieur was one of the best I’ve had, and the Far Breton with prunes was a first for me.

One of the things I love about being a private chef is discovering (and revisiting) great food while planning memorable dining experiences for clients.

🍤 Shrimp & Fennel Toast

This is by far one of my most popular appetizers for a dinner party. Also, it’s one of the easiest. Because there’s so few ingredients, quality really matters here.

I buy wild gulf shrimp whenever possible. Right
now, there’s some great shrimp at Costco.

The other important ingredient is bread. I’m fortunate to have here, and always use their bread for my toasts.
The dressing is simply , fresh lemon juice & zest, and .

Thinly slice fennel, ideally on a mandolin. Mix the shrimp, fennel, and dressing. That’s it. Put it on triangles of griddled toast, garnished with a fennel frond and some Urfa Biber chili if ya’ got it.

Rice pudding is a little nostalgic for me. But I never had it like this when I was growing up.

Jasmine rice cooked in coconut milk with brown sugar and spices. Caramelized pineapple that’s soaked in orange liqueur while it’s still warm. Finish it off with whipped cream and toasted coconut.

One of my favorite things to serve at a dinner party is a dip like this. Roasted red peppers, feta, pickled onions, roasted garlic, red wine vinaigrette and a little spice (Spiceology Pizza Spice to be exact)

I don’t have an actual recipe for this. I just taste and adjust until it feels right. But let me know if you have questions.

Serve it with pita chips/bread or whatever you like. It’s also good on an egg sandwich.

🍫 Eclat Chocolate
📍 West Chester, PA

I first met chef/owner Christopher Curtin of Éclat Chocolate shortly after he opened his shop. I’d recently moved to West Chester, Pa, and was excited when a world-class chocolatier opened shop there.

It’s hard to believe that it was 21 years ago. And until this weekend, I hadn’t been back since we left in 2007. So glad to see that the shop is still there.

I took a few pictures around the shop, but ate all of our chocolate before I had time to take pictures of it.

I had the most delicious meal last week at Purple Patch with Jonathan Bardzik. I think this is only half of the food we ordered (apologies for lack of descriptions here).

One of the things I especially appreciate is that they’re open for lunch, and have so many wonderful brunch options. Whether you’re new to Filipino food, or very familiar with the cuisine, I guarantee that you’ll find something you love.

💍 Wedding Reception Dinner

I recently had the pleasure of preparing a six-course, wedding reception dinner for 22 people. Doing this as a personal chef is quite the challenge. Besides all the food, I also brought all of the dishes and cookware.

I was too busy cooking to take pictures, but these photos were graciously provided to me by Joseph Paul Media. And if you’re looking for someone who can take care of literally all the other things for your wedding, I highly recommend JoJo Maguire. She even made their wedding cake.

Last personal chef event of 2025 for Perfect Little Bites

I did a six-course, in-home wedding reception for 22 people. It was a lot of food, and a lot of china. It was a beautiful event, though I don’t have many pictures.

Of course, I couldn’t have done it without help. I brought along my daughter Abby and chef Katrice from Francis Food Co. Thanks 🙏

This year I took off New Years. See y’all in 2026.

We’re still out there cooking. We have a couple events still on the books for 2025.
