Here is a nice alternative! Healthy Halloween Frog Eye Pops

What you'll need:

• 2 Kiwi fruit
• 1 cup of limeade
• 1 tablespoon of honey
• 8 3-ounce paper or plastic cups
• Popsicle sticks

How to make it

1. To make a batch, cut a ripe, peeled kiwi fruit into chunks. Blend the fruit chunks with 1 cup of limeade and a tablespoon or so of honey until the mixture is somewhat smooth (some small lumps are fine).

2. Slice a second kiwi into eight thin pieces and press them into the bottoms of eight 3-ounce plastic or paper cups. Pour the blended mixture into the cups, filling them each about halfway.

3. Place the cups in a Pyrex baking dish and cover them with foil. Insert a popsicle stick through the foil and into each cup (the foil will hold the sticks in place) and freeze the pops until solid, about 4 hours.

4. When you're ready to remove the pops from their molds, you can loosen them by briefly dipping the bottoms of the cups in warm water if necessary. Makes 8.

Still stressing about what to take to the Labor Day BBQ? Try this simple Avocado, Berry and Pine Nut Salad:

SALAD:
1 c. fresh strawberries, diced
1 c. fresh blueberries
2 large avocados, diced (make sure that the avocados aren't too ripe, they need a slight firmness to them)
1/4 c. pine nuts, toasted

Dressing: (You won't use all the dressing)
2 1/2 Tbs. lemon juice
3 Tbs. olive oil
3 Tbs. honey
1/4. tsp. salt
1/8 tsp. ground pepper

DIRECTIONS:

Whisk all the ingredients of the dressing together in a small bowl.

Place all the salad ingredients in a medium or large bowl, then spoon enough dressing over to coat and toss together gently. Start with a couple tablespoons of dressing, then add more to taste. Don't use all the dressing because it will become mushy. The secret to this salad is to add enough salt because it brings out all of the flavors, so taste the salad and add more salt and pepper to your liking.

Happy National Root Beer Float Day! We are enjoying this summer treat with this easy recipe:

INGREDIENTS
Vanilla ice cream
Root beer
Whipped Cream
Cherry

DIRECTIONS
Spoon a scoop or two of vanilla ice cream into a tall glass. Slowly pour root beer into the glass, allowing the foam to rise and then recede before adding more root beer. Top with whipped cream and finish with a cherry on top! Yummy!
