After many challenges, including high costs, a grease trap installation, and multiple inspections, we are finally reopening! Thank you all for your patience and support. We can't wait to serve you again—please come by and support us!

Hello all! Thank you all for your support and encouragement. It has been two weeks since we closed, and I’m hoping we can reopen soon.
I have been in constant communication with the City of Fife, Tacoma Sewer Department, and the Health Department. They have stated that we cannot operate the restaurant with our current small grease trap, so we are required to upgrade to a larger one.

We were given two options: a slightly larger grease trap or a much bigger outdoor grease interceptor(1000gal), which would cost around $80,000. Unfortunately, since the larger option is beyond our budget, we have no choice but to go with the smaller unit. I received the plumbing permit yesterday, and I’m hoping my plumber gets the necessary parts soon so the work can be completed by next week.

The frustrating part is that with the smaller grease trap, we won’t be allowed to take delivery orders, which account for about 30% of our total sales.
This whole situation has been incredibly frustrating, but I appreciate all of your support and will keep you updated.

A crazy thing happened today—we had to close the restaurant due to a grease trap issue. The one we have has been in use for over a decade, but the city just informed us that it’s not the right type. It’s frustrating because this wasn’t mentioned at all before we bought the restaurant.
We opened just three weeks ago and have been operating successfully, but now we’re facing another unexpected expense. We’ve already invested so much into opening, and now we have to spend even more to install a new grease trap. I have no idea how much this will cost, but until it’s resolved, we’re not allowed to reopen.
