This week we made homemade doner kebabs aka gyro meat.
After spending the last month in Australia, this became one of those meals we kept finding ourselves ordering again and again. Something about it just hits right. Simple ingredients, big flavor.
So we brought it back to the kitchen.
Ground lamb
Onions
Salt and pepper
Paprika
Coriander
Cumin
Greek seasoning
Greek yogurt
Olive oil
Mix it all together, flatten it on parchment paper, and bake at 450° for about 45 minutes.
I threw tomatoes and onions on the baking sheet for aromatics while it cooked.
Slice it thin, throw it in a pita, add tzatziki, lettuce, tomato, whatever you like.
Sometimes the best souvenirs you bring home from traveling are recipes.
