Soya sauce is an essential aspect of Chinese cuisine and has been used for hundreds of years. It can be used as a salt replacement to flavor dishes such as stir fries, satay, marinated vegetables, meat or tofu. Derived from soya beans, it has a very distinctive taste.
American Chinese restaurants typically incorporate cuisine from many different regions of China. In general, spicy dishes come from the Sichuan region, while Shangdong dishes tend to be more salty and crispy. Food from the Cantonese region generally has more sweet flavors.
