𝐌𝐞𝐞𝐭 𝐀𝐢𝐝𝐚𝐧 & 𝐂𝐡𝐢𝐚𝐧𝐧𝐞 𝐚𝐭 𝐇𝐞𝐫𝐛 & 𝐒𝐞𝐚! ⭐️

For Aidan, Encinitas felt like home from the moment he arrived. Originally from Byron Bay, Australia, he was drawn to the town’s laid-back surf culture, coastal beauty, and welcoming beach-town vibe. After joining Herb & Sea three years ago, he quickly found a community that reminded him of where he grew up.

Chianne’s connection to Encinitas goes back even further. A born-and-raised San Diegan, she spent countless childhood days surfing and enjoying the beaches of Cardiff with her family. Long before she joined Herb & Sea earlier this year, the restaurant’s location was already filled with memories. After beach days, her family would often stop at restaurants that once occupied the space. Today, getting to cook there is a meaningful full-circle moment.

When it comes to menu favorites, Aidan recommends the Scallop Aguachile paired with a crisp West Coast IPA, while Chianne loves the Sumac Tomatoes or Pork Tomahawk alongside the restaurant’s housemade milk punch cocktail, Peaches, Peaches, Peaches.

Outside of work, Aidan enjoys stopping by Lobster West for their lobster roll or bay shrimp and scallop rolls, while Chianne can often be found grabbing a sandwich and pastries from Prager Brothers before heading down to Swami’s Beach.

And as for our photo shoot? Let’s just say Aidan and Chianne kept us entertained the entire time! One minute they were laughing, joking, and bringing the silliness, and the next they were serving their best “Blue Steel” looks like seasoned models. 😎📸

Attention Encinitas! There’s a brand-new mural in downtown Encinitas, and we’re loving this beautiful new addition to our community!

Be sure to stop by Concept to check out the artwork for yourself. A huge shoutout to local artist 🫟 Abstract ism artist for sharing his talent and creativity with our town. Public art helps make downtown Encinitas vibrant, unique, and inspiring, and we’re grateful for his contribution.

Kori Gabs is an emerging artist living and working in the northern beaches San Diego. After studying industrial design at the Academy of Art San Francisco, he decided to bring it back to his roots of brush and canvas. He employs mixed media on canvas to render nonrepresentational scenes that give the impression of a mindfield of raw emotions. Through mark making he is able to focus on visual, metaphoric, and symbolic layers that lie within each moment of time. The result is a controlled chaos of an erudite abstract expressionist. His art explores atmosphere, energy, inner states as well as natural scenes and invites feeling.
