Lee Fish USA - Fresh & Frozen Seafood Leigh Fisheries decided to adopt this spelling and keep it as the brand for its subsidiaries.

The small village of Leigh in the North Island of New Zealand boasts a population of about 750 people and has become one of the most productive fishing villages in New Zealand thanks to its abundance of Snapper and dedicated fishermen. Even though the village and parent company is spelled “Leigh”, it was Leigh Fisheries’ Asian clientele that adopted the “Lee” spelling because it was most familiar

Although Australia is the smallest of the seven continents, it is distinguished by its isolation, surrounded by the Indian and Pacific Oceans. Its miles of pristine coastline, from the Great Barrier Reef (Queensland) to South Australia’s Spencer Gulf, provide some of the finest prawns in the world! 🦐 In fact, as most of Australia’s prawn fisheries are quite remote, very little industrial or agricultural runoff exists, which is a major issue for the shrimp industry in other parts of the world.

Our head-on prawn program is the most diverse in North America, offering unparalleled quality and year-round supply of Tiger Prawns, King Prawns, Endeavour Prawns, Banana Prawns, and more. Stay tuned for future posts as when we dive in further!

Hard to fathom…the Palisades and Eaton wildfires were so large that the smoke was visible from space. Although the majority of our customers are beyond LA, and we are located ~30 miles from where the fires occurred, it hasn’t felt right to post our regular content. We will soon but just want to say again to anyone in our beloved city who is currently displaced or whose business was impacted, our thoughts are with you. 💙

Part of our success is built on the dedication of our valued suppliers, like .australia. Their team works hard every day of the year, including Christmas.
They brought the holiday spirit to one of their aquaculture sites yesterday (swipe to 👀) so we wanted to give them a shout out and share what the company said on their IG:

“At Petuna, it’s not just about seafood – it’s about the passionate people behind it. From water to plate, their hard work ensures that only the best salmon and trout make it to your table. They’re the heart of Petuna.”🐟

However you celebrate your holidays, we hope you find time to relax this week!

Ooh that’s niiice fillet off a wild NZ Golden Alfonsino! 🔪👌🏼

Fished commercially in New Zealand for years, this catch is highly prized for its suburb eating qualities and is particularly revered in Japan as a sushi fish. 🍣

It is closely related to red snapper, offerring a clean white flesh with a mild, slightly sweet taste and moderate to high oil content. Its soft, yielding texture when raw makes it excellent for sashimi and nigiri. It firms up when cooked and - great for pan frying and whole fish presentations.

We receive sporadic inbounds of Golden Alfonsino year-round direct from . Dayboat line caught, harvested by Ike jime. Typically 1-5lb fish, graded at 1-2, 2-3, and 3-5. Ask your Lee USA rep for more info!
