Pasta and Grilled Vegetable Salad with Cilantro Dressing
Prep Time: 15 minutes / Start to Finish: 30 minutes
Makes: 6 to 8 servings
Dressing
1 can (4 ounces) Ortega Fire-Roasted Diced Green Chiles
1/4 cup chopped fresh cilantro
1/4 cup olive oil
1 tablespoon Regina red wine vinegar
1/2 teaspoon Polaner minced garlic
Salt and black pepper, to tasteSalad
1 red bell pepper, cored, seeded, cut in half
1 green bell pepper, cored, seeded, cut in half
1 medium zucchini, cut lengthwise into thin slices
1 medium yellow squash, cut lengthwise into thin slices
1 large red onion, cut into 1/2-inch-thick wedges
1 pound pasta shells or penne, cooked
1 jar (16 ounces) Ortega Garden Vegetable Salsa
1/4 cup firmly packed fresh basil, cut into thin strips
Lettuce leaves (optional)Combine chiles, cilantro, oil, vinegar and garlic in small bowl. Whisk until well blended. Season with salt and pepper, to taste. Set aside.Preheat grill to medium-high heat, about 15 minutes. Lightly brush grill grid with vegetable oil.Grill bell peppers, zucchini, squash and onion 3 to 5 minutes per side or until fork-tender. Remove vegetables from grill: cut into bite-size pieces. Toss cooked pasta, salsa, sliced vegetables and basil in large bowl or serving platter. Serve with dressing on lettuce leaves, if desired.

Pasta and Grilled Vegetable Salad with Cilantro Dressing

Red Tea Harvest Strawberry Smoothie Serves: 2
Preparation Time: 5 to 10 minutes Chill Time: 1 hour
1 cup boiling water
3 Lipton Red Tea with Harvest
Strawberry & Passionfruit
Flavor Pyramid Tea Bags
2 tablespoons sugar
1 cup frozen strawberries
1/2 cup strawberry frozen yogurt*
1/2 cup ice cubes (about 3 to 4)
Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze, then stir in sugar; chill.In blender, process tea, strawberries and yogurt. Add ice cubes, one at a time, and process until blended. Garnish, if desired, with whipped cream and strawberries. Serve immediately.
*Substitution: Use regular strawberry yogurt.

May starts with the celebration of Cinco de Mayo that is actually a regional holiday in Mexico, with the celebrations primarily limited to the state of Puebla. The connection to Puebla involves the true meaning of the holiday, which commemorates the Mexican army's unlikely victory over French forces on May 5, 1862. Then the celebration continue with Mother’s day a great opportunity of get together as a family, in fact The first Mother's Day was celebrated on May 10, 1908 and honored the late Anne Marie Reeves Jarvis. After this initial celebration, Mother's Day caught on. The Mother's Day International Association was established on December 12, 1912, to promote and encourage meaningful observances of the event. And on May 9, 1914, a presidential proclamation declared that every year the second Sunday in May would be observed as Mother's Day. Besides those celebration El Paso has a lot of activities like the one that has transform our civic center, from March to July the El Paso Convention Center, became the home for the USBC, this event will get together around 40,000 bowlers from around the world. Soon in EL Paso...Benise, and his Emmy Award winning PBS Special NIGHTS OF FIRE cast, return with a new World Music and Dance Production, THE SPANISH GUITAR. While taking place on an ever changing stage, Benise’s new show will feature real video footage from his travels around the globe. The cultures and experiences Benise encountered on his voyage were the inspiration for the new music, dance, and costumes featured in THE SPANISH GUITAR. THE SPANISH GUITAR is an epic tale that will transport the audience to such exotic places as a Parisian café, a Flamenco Tapas Bar in Spain, an Arabian desert, a Venetian Masquerade ball, and the cobblestone streets of Old Havana. This new show will feature Benise’s guitar as protagonist, as it becomes the keeper of the stories of glory and tragedy through time and worlds gone by. Brilliantly choreographed dance numbers and orchestral pieces accompany the stories that were sealed inside this magical instrument. Benise’s THE SPANISH GUITAR takes us on a deeply personal journey to worlds both far and away and reminds us that hope can be the healing thread in all our lives. The dancers in THE SPANISH GUITAR were carefully handpicked form a global pool of some of the most brilliantly diverse talent to be found. Traditional Flamenco dancers, Broadway performers, and soloists previously featured with the likes of Madonna, Gloria Estefan, and Ricky Martin, have all joined forces to make up Benise’s female dancers – The Gitanas.
