Beef Cheek Barbacoa taco kits are now live. Only 50 total will be available. We took incredibly high quality beef cheeks from , marinated them with citrus zest and juice, garlic, spring onions, dried chiles and spices, then braised them lowwwww and slow with traditional maguey leaves until they became the most succulent, tender, flavorful beef you will ever have in your life.
We pickled the onions in house.
We're making the verde salsa from scratch.
The tortillas are the best we've been able to find. Incredible flavor and texture when toasted in a pan with a little water sprinkled on each side.
The avocado will sadly be those little cups you get from the supermarket. I actually looooooove making fresh guac, but there's no way to do it logistically in this way. Please forgive me. I will certainly lose sleep over this. For serious. (Extra points if you buy your own fresh avocados).

Did some testing for Beef Cheek Barbacoa Taco Kits this week using beef. Unbelievably tender, unctious, juicy, and packed with flavor. Made as close to the traditional way as possible without using lamb, digging a pit, or aging hardwood for several years. Marinated overnight, seared over charcoal for a bit of smokiness, then braised with maguey leaves and an insane amount of aromatics. Will probably use just the zest and juice from the citrus next time instead of the whole thing, and will most likely do 50/50 cheeks/chuck.... it was almost TOO rich.
We have the entire team cycling through paid vacations the next 4 weeks, but will do our best to get this on the menu soon.

We use locally grown produce whenever we can. We love using because their stuff tastes great, and they're really good people.

We're making the greatest queso of all time™️ and Grant is clearly overjoyed.
Highest quality milk and cheese we could find, made right here in ohio. If we have extra after we make it this weekend, we may sell it in 8oz containers.

We believe that taking care of your community and those less fortunate than you is a non-negotiable part of the social contract. We are very thankful for the ability to do so thanks to all of you that let us cook for you, share our posts, and tell people about us.
Huge shout out to and for helping to coordinate everything every week, and for working so hard to take care of people and put them in a better position to succeed.
We need to plan something with soon, too!!!

Testing for 🍅 season. Slow-dried on-the-vine tomatoes, maldon french sea salt, single origin olive oil.
Will use the oil in vinaigrette, and the tomatoes add an incredible pop of sweetness and umami to dressings, sauces, pasta, dumpling fillings, aioli, etc.
If our plants produce enough, might even sell this on it's own to help yall have more fun making your own dishes at home.
