We know many of you are asking, “When are you reopening?” Believe us, we ask ourselves the same question every day.

We also know we’ve shared a few target dates along the way, only to have them change. The truth is, renovating a commercial kitchen after a fire has been far more complex than we ever imagined. Every completed step seems to uncover another inspection, installation, or detail that has to happen before we can safely reopen.

The good news? We are getting closer. We can finally see the light at the end of the tunnel. Rather than give another date that may change, we’d rather wait until we know it’s one we can keep.

They say absence makes the heart grow fonder, and judging by your messages, comments, and check-ins, we think there might be some truth to that. Just know the feeling is mutual—we miss all of you just as much. ✌️🩷🍕

It’s been a minute since we’ve checked in with our staff while we’ve been shut down.
It’s Friday, and our kitchen would usually be pumping out our Fish Fry, the band would be setting up on the patio (it would have been Big Brother’s Vinyl tonight 🥲), general Friday craziness and Lauren would be taking it all in stride. Always calm. Always steady. We’re so lucky to have her keeping us grounded. She tells us how much she misses the challenges of a busy Friday night—and we miss her too!

Here’s LAUREN:

Hii I’m Lauren. I have been working at countryside for about two years now. My responsibilities are to serve smiles, good pizza, good drinks, and good vibes to all of our customers.

During this time off I have been focusing most of my time going to the gym, spending as much time as possible outside going on walks, and enjoying time with family and friends!

Since we have been closed I definitely have been missing all of my coworkers at Cside and just serving in general!

First thing I will order when we come back will 100% be the pizza!!.... Pepperoni and green peppers with extra sauce and extra crispy pleaseeee 😌

Hi Folks!

It’s been a while since we’ve provided an update. We know we’ve been pushing back the date often, and it hasn’t been fun for us either. April 21st seems like a lifetime ago. 😑

We all know how construction goes—nothing ever happens on time or on budget. And this project has been no different. But we really do see the light at the end of the tunnel. 😉 We don’t have an exact date yet, but we feel confident that sometime during the week of June 29th, the ovens will be fired back up
🍕🍗🍔 and the taps will once again be filling your glasses with your favorite beer. 🍺🎉

The patio will be open and ready for our Countryside Summer Sessions — Live music on the patio. Kicking off the series will be Strawdawg on July 3, starting at 7:00pm. 🎶

We’re excited. We’ll be ready. We can’t wait.

Wednesdays are one of the most chaotic days of the week (boy, do we miss those). It’s half-priced pizza day, which requires skill, speed, and the ability to put out a lot of fires all at once. (Figuratively, not literally—we’re still dealing with the literal fire. 🫠)
Fortunately, Tina is always there to help us. Our go-to person. Our utility player. The one who wears many hats—and somehow looks good in all of them.
Whether she’s jumping behind the bar, helping out on the floor, answering phones, or keeping the rest of us from completely losing our minds, Tina does it all with a smile.

1) INTRO:
Who are you - how long have you been here and what are your main responsibilities at Cside?
✨ Tina. 14 years. Someone once called me the Chaos Coordinator and I think that fits.

2. What have you been doing to keep busy since we’ve been closed?
✨Since the great countryside fire, i have been trying to keep myself busy. I’ve been bartending at a country club for events, and I actually signed up for Uber Eats, not crazy about doing this 😜 I’ve been trying to keep in touch with everyone. I feel like I have a severe case of empty nest syndrome.
And… I became Miss T.
A name given to me by the girls soccer team. I am the team fun mom/assistant assistant coach/chaperone/cheerleader, etc. I never thought I’d be a pseudo soccer mom!!!

3. What have you been missing since we’ve been closed?
✨I miss my countryside family. Period. They’re the family we all chose to be a part of. Even the customers.

4. What is the first thing you’ll order when we reopen? I want a Ruben with extra 1000 island on toasted French bread and a side of sweet potato fries with honey mustard.
