Our first foray into American-style Pale Ale drops this week!
Name: Superdelic Cowboy
Collaboration w/: Craft Coast & Ephemeral
Style: American Pale Ale
Malt: Weyermann Extra Pale Pils, Wheat
Hops: Superdelic, Simcoe
Yeast: Chico
ABV: 5.6%
We teamed up with our homies at Craft Coast and Ephemeral Rotating Taproomfor this American Pale Ale collaboration. Following Craft Coast’s lead, we leaned into wheat malt for texture and Superdelic hops from New Zealand. The Craft Coast team are big fans of Superdelic and this was our first opportunity to use the hop. This American Pale ale utilizes Simcoe hops for classic American hop undertones of grapefruit and pine with the Superdelic bringing some more contemporary fruit notes of raspberry and pink starburst candy.

We are beyond excited to announce the release of Visions of the Future, our first beer release as part of the FWD program.

Style: West Coast IPA
Hops: HBC 1183, Mosaic
Malt: Rahr To-Thee Pils
Yeast: Chico Ale
ABV: 6.8%
Aroma: Candied Pineapple, Honeydew Melon, Meyer Lemon, Grapefruit Pith
Flavor: Guava, Pine, Honeydew Melon
This beer was brewed in partnership with FWD, the hop innovation program from and and features HBC 1183- only available through participation in this program. HBC 1183 has a similar breeding lineage to the recently released Krush hop, and is similarly loud. Paired with our selected Mosaic hops, the two hops are playing jazz together...

You asked, we listened (also, we really wanted to revisit this one). This iteration of Modest West keeps the hop varieties the same but utilizes our 2025 crop year selected hops. We’ve been experimenting with increasing our boiled hop load in low-alcohol beers to improve body and texture. Between the increased kettle hop load and decoction, the beer drinks much more full and saturated than the low ABV would suggest. Hoppy, low alcohol beers are a big passion of ours, and we’re really excited about this iteration! Just in time for spring weather and patio drinkin’ (although it feels like this past winter never came and it’s been spring since last October.)

Aroma: Pineapple, passionfruit, pine, cannabis

We’re back and we’re still biased toward West Coast-Style IPA. And with a truly unique hop expression, Coastal Bias remains one of our favorite Amalgam releases since we started our partnership with Bierstadt Lagerhaus.

We perceive huge pineapple, lychee and passionfruit on the nose, with a saturated pineapple kush cannabis character that lingers through the palate. A firm bitterness and crisp finish make this beer dangerously drinkable. 2024 Alpha King - Jesse’s Pick Award Winner.

We’re back with a new batch of ModernOriginal, our ever-evolving, New Zealand-Style IPA.
Style: New Zealand IPA
ABV: 6.8%
Malt: Rahr North Star Pils
Hops: Citra, Nelson Sauvin, NZH-109
Yeast: Chico Ale
Modern Original is our playground to explore New Zealand hops and their unique sensory expressions. In partnership with , we’ve gained access to their Bract program- which introduces a small number of brewers to un-released experimental hops to get feedback. We previously used Bract 106 in a hoppy lager, Uncharted Paths, so were incredibly excited to be offered experimental Bract 109. The beer is ripe with distinct notes of Passionfruit, mango and lychee with a firm bitterness that reminds us of watermelon rind. Overall, NZH-109 presents incredibly tropical, and is unlike any hop we’ve used to date.
Look for Modern Original at all the usual spots starting later this week.

We’re ending the year on a high note in the Dank Department, our new 6.8% West Coast IPA featuring Riwaka, Nectaron Cryo, Mosaic, Mosaic Cryo, Columbus Cryo.
How do you define dank?
The term “Dank” has been removed from many hop suppliers’ sensory lexicon as it historically has many negative connotations; most notably damp and musty. We use the phrase “Dank” to denote positive sensory outcomes reminiscent of cannabis and petroleum. We carefully selected hops with the goal of bringing the most impactful aromas possible, highlighting unique and modern hop expressions. Columbus Cryo is known for being a hugely impactful hop and dominating beers, but we kept it light handed in the dry hop to accentuate the rest of the dry hop character. Dank Department erupts with aromas of Peach-Os, Pineapple Kush, lychee and a hint of kerosene. The palate is saturated with Pineapple Kush and has a sticky, oily bitterness that lingers like Douglas Fir tree sap.

We’re pleased to introduce the Cascade Agenda, our new West Coast Pils brewed in collaboration with Stan Hieronymus.

We have long admired the research and work has done to understand hops and their interactions with beer. His studies and writings have influenced the way we think about hops and explored new cultivars and hopping techniques. We casually asked Stan if he had ever had the opportunity to explore some of his research in actually designing a beer and he was very excited to collaborate with us on this project. Stan has long been a proponent of USDA (public) hop cultivars, so we decided to showcase the Cascade hop and present it in a more modern light. Stan has recently been curious on how hop picking windows change sensory outcomes and how hops interact with beer foam. For this beer we utilized exclusively very late-picked Cascade hops from our friends at CLS, Crosby, TV Hops and Freestyle Hops (NZ). We also incorporated a small amount of Chit malt to help build foam (Cascade hops are notoriously very foam negative). This West Coast Pils showcases sensory notes of Grapefruit zest, meyer lemon, and cantaloupe melon.

One of our favorite things about fall is Fresh Hop season. We’ve always admired Breakside’s fresh hop program and their commitment to using fresh hops on the cold-side of production instead of the hot side, like most brewers do. For the first year, our friends at have a new product called “Cryo Fresh” that we had to try out. They harvest whole cone hops and immediately Individually Quick Freeze (IQF) them at a fruit and berry processing plant. These frozen wet hops are then immediately run through their Cryo pellet plant which strips the leaf matter from the whole cone hops and filters out the frozen lupulin oil glands through shaker screen and then pelletizes that shake (hop kief) for brewers to use. Skipping the normal kilning step of the hop harvesting process preserves the fresh hop oils and character of them in a way that is much easier to use as a cold-side dry hop addition. Overnight shipping with dry ice got these Cryo Fresh pellets to us the day after the hops were picked! We experience aromas dripping with ripe mango and blueberries and a saturated hop flavor of mango and stone fruit. Chlorophyll and sticky cannabis linger on the palate through a firm bitterness.
