Recently, I successfully fulfilled a large order for 36 soy-free, gluten-free cookies featuring a cherry pie filling. The client specifically requested a simple cookie without any elaborate garnishes or chocolate. Notably, these gluten-free cookies are virtually indistinguishable from their traditional counterparts. In essence, they are delightful little pastries. I hope everyone is doing well. Due to my recent work schedule, I haven’t had the opportunity to visit the farmers markets. One of my most uplifting orders has been a request for a 4th of July party. They wanted them all 5 flavors but cut in half to share with their family. Have a liberating Independence Day everyone. Thank you all for your inspiring orders over these past couple weeks. Stay safe out there.

I hear you have exceptional peaches in this region, which should be in season around this time of year. Can anyone recommend a reliable source to procure these products locally, having not yet explored many farmers markets in the Denver area?

Curry has been on my mind. I prepared a Thai Curry called Khua Kling. Typically, one would stir-fry the protein, but I opted to make mine more akin to a Larb. I began by toasting my chiles and turmeric, then added my Chile sauce and cooked my chicken in the sauce. Various types of protein can be utilized, with chicken and pork being particularly well-suited for this dish. When assembling the components, it is advisable to keep the mint, lime wedges, Thai basil, and cucumbers separate to avoid reheating them with the rest of the dish. What makes the Lemon Raspberry so special? It’s a thumbprint sugar cookie with a limoncello custard then brûlée sugar on top. The filled with an Italian meringue which is made by pouring boiling syrup into egg whites which creates a stronger meringue which is less prone to weeping and holds longer.
