This is Buddy. He’s are long haired dachshund. He’s about a year and a half old now, and a real character. He also loves to help me garden. He keeps an eye on our raised beds; to make sure I’m doing it correctly. He’ll be helping me all summer!!! Give him a thumbs up and share, and he’ll keep you informed on how our gardens are doing. These photos were from March 23rd. We've had snow and a freeze since then. Oh by the way we're in Ohio. It could still snow here by Mother's Day!

There is strong demand for alternatives to pharmaceuticals for a variety of common illnesses due to concerns of safety, efficacy, and a desire for more “natural” products. Despite this growing interest, “conventional” healthcare providers may have little to no knowledge about herbal medicines, which is further compounded by the sometimes, misleading information in the media and on the internet. This course provides the necessary background for the lay person to support their overall wellness, as well as provide their healthcare provider with backup material if needed.
No one knows what your family needs on a daily basis more than you do. Take charge of your wellness and that of your family; with a class that can be taken at your own pace and time schedule, written in plain language suitable for all students. Downloadable class material; email and text accessibility to teacher. Video segments for herbal recipe preparation and gardening methods; 15% discount on materials and supplies needed to make product for one year from the time you start the class. Cost $399

LEMON GARLIC SHRIMP PASTA

Serve a dish that looks like it came straight from a 5-star restaurant. This is a meal that looks complex to make, but isn’t. Light but flavorful. We pair this meal with a buttery Chardonnay but it also pairs well with a Sauvignon Blanc.

• 1 to 1 ½ pound deveined fresh shrimp with tails
• 2 tablespoons of extra virgin olive oil
• 6 tablespoons of butter
• 6 to 8 large cloves of garlic (minced)
• 2 large shallots (diced or slivered very fine)
• 1 teaspoon cayenne pepper flakes
• 1 tablespoon lemon zest
• ¼ to ½ cup fresh parsley (chopped)
• ¼ cup fresh lemon juice
• ½ cup white wine
• 1 pound of pasta of your liking or Fettuccini noodles

Directions
1. Cook pasta, drain, drizzle with 2 tablespoons of melted butter; set aside
2. Heat skillet; add olive oil and remaining 4 tablespoons of butter
3. Add garlic, shallots and cayenne flakes to melted butter and olive oil; cook until translucent and very aromatic
4. Add shrimp and sauté about 1 minute on one side; add lemon zest and white wine, turn shrimp over cook 1 minute more
5. Add lemon juice and parsley cook about 1 to 2 more minutes (or until shrimp start to turn pink)
6. Salt and pepper to taste (coarse ground pepper more dramatic)
7. Pour over cooked pasta
8. Splash with more chopped parsley and bit of lemon juice if necessary
9. ENJOY
