Indian Pumpkin Curry

Ingredients:
1 medium pumpkin, peeled and diced
1 tablespoon coconut oil
1 onion, chopped
2 cloves garlic, minced
1-inch piece ginger, grated
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 (14 oz) can coconut milk
1 cup vegetable broth
Salt and pepper to taste
Fresh cilantro for garnish
Cooked rice or naan for serving

Directions:
In a large pot, heat coconut oil over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
Add the diced pumpkin, curry powder, cumin, turmeric, and stir to coat the pumpkin evenly.
Pour in the coconut milk and vegetable broth, then season with salt and pepper. Bring to a gentle simmer.
Cover and cook for 20-25 minutes or until the pumpkin is tender.
Stir occasionally.
Once cooked, use a potato masher to mash some of the pumpkin for a creamier texture while leaving some chunks.
Serve hot, garnished with fresh cilantro, alongside cooked rice or naan.

Tangy, sweet, and super colorful – these homemade fruit roll-ups are made with real fruit and a burst of Kool-Aid flavor for that nostalgic punch!
📝 Ingredients:
2½ to 3 cups fresh or frozen fruit (e.g., strawberries, mango, peaches)
1 tablespoon lemon juice
2–3 tablespoons honey or sugar (to taste)
1 packet Kool-Aid (any flavor – cherry, tropical punch, etc.)

🔪 Instructions:
Blend the Mixture
In a blender or food processor, combine:
Fruit
Lemon juice
Sweetener
Kool-Aid powder (start with half the packet, taste, and adjust)
Blend until completely smooth.
Prep Your Baking Sheet
Line a large baking sheet with parchment paper or a silicone baking mat.
Pour the mixture onto the sheet and spread evenly with a spatula into a thin layer (about ⅛ inch thick).
Bake Low and Slow
Bake at 170°F (75°C) or the lowest setting of your oven for 4–6 hours, until it’s no longer sticky and can peel off easily.
(Time depends on oven, thickness, and fruit used.)
Cool and Cut
Let it cool completely. Peel off the parchment paper, then use scissors or a pizza cutter to slice into strips.
Roll up with parchment paper or wax paper for that classic look.

🍇 Jolly Rancher Candied Grapes Recipe
Sweet, crunchy, and bursting with fruity flavor! These candied grapes are coated in a glossy Jolly Rancher shell that crackles when you bite in – pure candy magic.
📝 Ingredients:
1–2 lbs green or red grapes (seedless, firm, and dry)
6–8 oz Jolly Rancher hard candies (any flavor or mix)
1 cup granulated sugar
½ cup light corn syrup
¼ cup water
Toothpicks or skewers (optional)

🔪 Instructions:
Prep the Grapes
Wash and thoroughly dry the grapes. Stick each grape onto a toothpick or skewer (optional but helpful).
Crush the Jolly Ranchers
Place Jolly Ranchers in a zip-top bag and crush them into small bits using a rolling pin. Set aside.
Make the Candy Coating
In a saucepan over medium heat, combine:
1 cup sugar
½ cup light corn syrup
¼ cup water
Stir gently and let it boil (don’t stir once it starts boiling). Heat until it reaches 300°F (hard crack stage) using a candy thermometer.
Dip and Roll
Quickly dip each grape into the hot sugar mixture (be careful!) and immediately roll in the crushed Jolly Ranchers.

1/2 cup granulated sugar
1 tbsp lemon juice
3 tbsp cornstarch
1 tbsp water
Optional: cornstarch or powdered sugar for dusting

🔧 Instructions:
Mix Base: In a small bowl, mix cornstarch with 1 tbsp water to form a slurry.
Cook Mixture: In a non-stick saucepan over medium heat, add mango purée, sugar, and lemon juice. Stir until sugar is dissolved and mixture begins to bubble.
Thicken: Slowly stir in the cornstarch slurry. Keep stirring constantly until the mixture thickens into a glossy, sticky paste (about 5–7 minutes).
Set Candy: Pour the mixture into a parchment-lined dish or silicone mold. Flatten and smooth the top with a spatula.
