A product's net weight before it goes into the oven and after can be very different things.

Moisture loss during cooking and processing is one of the most underestimated compliance risks in food labeling. Roasted meats, baked goods, and dehydrated snacks all lose significant water weight during production. If the finished product is consistently falling below the declared net weight on the label, there's a compliance problem.

A compliant nutrition label requires the net quantity to reflect what's actually in the package, not what went in before cooking.

The word "Natural" appears on thousands of food products but the FDA has never formally defined it.

Unlike "Organic," which requires USDA certification and strict production standards, "Natural" has no legally binding definition. The FDA's longstanding informal policy simply says a product labeled "Natural" should contain "nothing artificial or synthetic… that would not normally be expected to be in that food."

That means there's no certification process, no third-party verification, and no clear enforcement standard, leaving the door wide open for interpretation and consumer confusion.

So next time you see "All Natural" on a package, know that it might mean far less than you think.

The same product can legally have two completely different serving sizes — one for the US label, one for Canada.

The FDA and CFIA use different Reference Amounts Customarily Consumed (RACCs) across many food categories. That means the same product crossing the border can show different calories, different % Daily Values, and different nutrient rankings on each label.

Both are fully compliant. Both look completely different.

It's one of the most common compliance surprises for brands expanding into new markets and one of the easiest things to get wrong.

🥕 Fact Friday: The term "Fresh" is one of the most strictly protected words in the FDA's dictionary.

It can only be used on food that is raw, has never been frozen or heat-processed, and contains no preservatives. Surprisingly, even a light chemical wash used to prevent browning can disqualify a product from carrying the "Fresh" claim.

Before you finalize your "Fresh" marketing claims, double-check your processing flow. If your raw ingredients undergo any stabilization treatment (even if they remain raw) you may need to reconsider your phrasing to stay fully compliant.
