The Pine Club in Dayton has been serving steaks since 1947 and has never taken a credit card, never taken a reservation and never explained itself to anybody.
The rules are the reputation. Cash or check only. No reservations under any circumstances. You put your name in and you wait, sometimes an hour or more, in a small bar area with a drink. The wait is not a failure of the system. The wait is the system.
The building is small and dark. Wood paneling, red leather booths, low lighting, a bar that has been polished by sixty-plus years of elbows. Nothing about it has been updated to look like anything other than what it is.
The steaks are the reason. Filet, New York strip, ribeye, all broiled and served without ceremony. The stewed tomatoes are the side everyone orders and the one people describe when they try to explain the place to someone who has not been. Sweet, cooked down, served hot in a small dish, and completely out of step with everything else on the plate in a way that works.
The salad comes with a house dressing people ask about and do not get an answer on.
The Ronald Reagan story is the one Dayton tells. When he was in town during a campaign, his people arranged for him to eat there, and depending on who is telling it, he either waited like everyone else or was politely informed that the no-reservations policy applied to him too. The Pine Club has never leaned on the story, which is part of why it survives.
James Beard recognized it as an America's Classic, which brought national attention the restaurant did not ask for.
It is on Brown Street near the University of Dayton campus, and it has outlasted essentially everything around it.
Bring cash. Go early or go late. Do not ask about the tomatoes.
