Introducing three new small‑batches, crafted in partnership with .carlos59 at .hn, each offering a completely different expression of what makes Marcala so special.
🍇🍑🫐PACAMARA Vol. 2: An evolution of our original Pacamara. Naturally dried with an 82‑hour extended fermentation, this nano lot shines with red grapes, peach, and berry notes, lifted by a light body and bright, complex acidity. Same variety as the OG, new farm location and process, resulting in a cup that feels vivid and intentional.
🍊🍋🟩🫐GESHA Washed: A rare, 60‑lb nano lot showcasing the elegance of washed Gesha. Expect orange blossom, lime, and juicy berries, supported by a light body and bright acidity. Produced through a 46‑hour extended fermentation, this coffee is delicate, floral, and beautifully expressive of Carlos’s precision and craft.
🍯🍎🍈HUERTAS MIEL: A comforting, honey‑processed micro lot with a Light+ roast profile. Centered on sweetness and warmth, this release brings baked apple, ripe melon, and sweet grains, with a full body and soft acidity. Designed as the “medium” expression of our beloved Huertas, it leans into cozy, baked‑pie character.

1. We focus on shade grown coffee, which helps preserve wildlife habitats, prevents deforestation, and promotes healthier soil under the forest canopy.
2. We build partnerships with environmentally responsible farmers who prioritize sustainable growing practices.
3. We roast a number of naturally processed coffees. This method consumes significantly less water than other methods and reduces wastewater output.
4. Shade grown coffee is hand picked, which can reduce crop damage and agricultural waste.
5. Our packaging is 100% recyclable once empty.
