It is perfect Farmers Market weather this weekend and I have reflected that in the at :
This week I decided to do something a little different with the plums. I made some Brown Butter Plum Crumble Bars; a buttery biscuit base made with browned butter for a delightful nutty taste, layered with jewel-like with a hint of cinnamon, and topped with a brown butter crumb. Crisp, jammy and nutty, if I had to pick three adjectives.
Next up is my simply lovely Mixed Berry Buttermilk Cake, made with raspberries, blackberries and blueberries. Light and fluffy and packed with sweet and tart berries, with a sugary crust that makes your mouth water.
As the sun is shining, I thought I would make some Lemon All-Butter Shortbread. Are there photos of them? Surprisingly, yes! 😂😂

Plums are back. Sweet, juicy with a hint of tartness, and so the Plum Crumble Cake is this week's featured bake. A deliciously moist cake, with a plum layer, topped with a ground almond, butter streusel. In the UK we would serve this with a cup of tea, but I know we are in the land of coffee. There shall be no judgement on my part. 😉
As the seasons change, I have to let my Grapefruit Drizzle Stans know that this weekend is the last weekend, (for a while), that grapefruit drizzle will feature in the store. It will be back once the TX ruby grapefruit is back in season, so watch this space.

The strawberries in Kelley Produce are particularly delicious, so I made a Strawberry Cake to showcase them. The sponge is almost like a sour cream pound cake, flavoured with lemon (juice and zest), layered with chopped strawberries and topped with halved strawberries. A joy to behold and a joy to eat.
TX Ruby Grapefruit is still available in the store, it is still delicious, and I would be remiss if I didn't make my tastebud-tingling grapefruit drizzle cake (I also think I would be run out of town if I didn't make it).
There are also some Chocolate Chip All-Butter Shortbread in the box and I managed to take a photo of the elusive little so-and-sos.

After a small hiatus, the is back at .
Kelley Produce makes some absolutely delicious strawberry jam. Seriously. When you open the jar, your senses are filled the aromas of spring. As I have been back in Blighty, I was inspired to make a Victoria Sandwich (Victoria Sponge Cake). This is a British classic, named after Queen Victoria, who was partial to a slice or three with her afternoon tea. It's a wonderfully simple sponge cake layered with strawberry jam. With it being this weekend, I am sure Mums, Moms, Nannas and MeeMaws everywhere would enjoy a slice too.
Of course my Grapefruit Heads wouldn't allow the weekend go by without my life changing grapefruit drizzle cake in the box. The Texas ruby grapefruit is still eating good.
There are also some Chocolate Chip All-Butter Shortbread in the box. I forgot to photograph them, so normal service has resumed 😂

This weekend I had the absolute pleasure of baking for the annual “Boots & Brews Tea Party” benefitting - a wonderful charity supporting unhoused teens attending school in Irving, TX.
There was a traditional Tea Service (by Mr Bird) served with my ever elusive shortbread.
On my afternoon tea table were: Cucumber Sandwiches, Egg & Cress Sandwiches (both with my homemade sandwich bread), Victoria Sandwich with strawberry jam, Coffee & Walnut Cake and my life-changing Grapefruit Drizzle Cake. Obviously there were also Rich Scones with Raspberry Jam & Devonshire Clotted Cream served Devon-style .
The weather held out (thankfully), and people had a great time whilst raising money for such a worthy and important cause. You really ought to check out the organisation (https://www.levelpathways.org/) and see if there are ways you too can contribute.

This week in the :
There are some beautiful pink delight plums. Sweet and slightly tart, so I made a Plum Crumble Cake. A deliciously moist cake, layered with plums, topped with a ground almond crumble (streusel). A British variation of a coffee cake.
Of course my superfans wouldn't allow the weekend go by without grapefruit drizzle cake in the box. They know how delicious it is. If you're quick enough, you will too.
There are also some Chocolate Chip All-Butter Shortbread, that I actually remembered to photograph! I know. I surprised myself.

This week :
I picked up some Honey Crisp Apples from the store, and decided to do something a little different. An apple blondie. These blondies are made with browned butter, which adds a little bit of toasted nuttiness, without adding nuts. I added cinnamon and a pinch of nutmeg, to compliment the sweet-tart of the apples.
Yes, yes, yes, my most marvellous Grapefruit Drizzle Cake is still in the box. A light sponge cake, made with TX Ruby Grapefuit zest, drenched in TX ruby grapefruit syrup, with a super citrusy, sugary topping.
Finally the Chocolate Chip All-Butter Shortbread is back in the box. It looks like my mis-remembering to photograph them has returned. I guess if you want to know what they look like, you'll have to purchase some 😉.

Last weekend I had the pleasure of working with the fabulous and here is the selection of sweet treats I made:

-Limoncello Cupcakes. Lemon cupcakes infused with limoncello topped with lemon cream cheese frosting.
-Strawberry Cupcakes. White vanilla cupcakes, studded with fresh strawberries, with a strawberry cream cheese frosting.
-Pecan & Walnut Brown Butter Blondies
-Double Chocolate Brownies

It's a warm one this weekend, so in the I have kept the sunshine in mind:
First there is a Buttermilk Berry Cake. Light and fluffy, bursting with Blueberries, Raspberries & Blackberries and a touch of lemon zest, perfect to enjoy by the pool, or indoors in the cool of the air-conditioning.
Obviously, I couldn't disappoint my Grapefruit Drizzle stans, so my ever present, glorious Grapefruit Drizzle Cake is there too.
I also have not one, but two variations on my All-Butter Shortbread. This week you have a choice between Pecan or Cinnamon, and I remembered to photograph them 😁. I mean you don't have to choose. You can buy one of each.

This week, in the :
It's St Paddy's week(end) so I picked up some fresh ginger and made a . This molasses rich cake, made with fresh and ground ginger, is perfect as a sweet treat, and, bear with me, rather tasty with a nice piece of mature Irish cheddar. Seriously, I would not steer you wrong. One of the best things about this cake, is after a couple of days the flavours intensify, and it gets stickier, like gingerbread. That's if it lasts that long.
Of course the TX Ruby grapefruit is still eating good, so my stupendously delicious Grapefruit Drizzle Cake is present in the box. I'm really running out of superlatives.
All-Butter Shortbread has returned to the lid. They, like their chocolate chip brethren, are also camera shy.

There are some beautifully ripe plums in the store. Sweet, tart & juicy, so I made a Plum Coffee cake. A deliciously moist cake, with a plum layer, topped with a brown sugar, cinnamon streusel. Perfect with a cup of coffee, or tea, or a glass of wine. I won't judge.
For my citrus fiends out there, there's my outrageously delicious Grapefruit Drizzle Cake made with Texas Ruby Grapefruit.

Love is in the air and love is in the
First up we have a newcomer. Millionaire's Shortbread.
'What is it?' I hear you cry.
Well, it's a buttery biscuit base, layered with caramel and Belgian Chocolate. It's like a fancy Twix. It's everything a Twix dreams it could be.
Next, some positively romantic Chocolate Raspberry Brownies. These deliciously fudgy squares are loaded with raspberries, and are perfectly indulgent.
Finally for my Grapefruit Drizzle stans, it's there, in the lid, just waiting for you to buy it.

The chilly start to the weekend inspired me to make some Mexican Chocolate Brownies. These deliciously indulgent, fudgy squares are spiced with cinnamon, and a pinch or three of cayenne, to give that extra heat, rather like a warming mug of hot chocolate.
For those who want some sunshine, there's my ridiculously addictive Grapefruit Drizzle Cake. Seriously, you can't just eat one slice.
Continuing the citrus theme, I have also made some Lemon All-Butter Shortbread.

The is back this week at with the first batch of baking of 2026.
As we know, there is nothing more delicious than the Texas Ruby Grapefruit, so why not start the year as I ended 2025, with my ridiculously addictive Grapefruit Drizzle Cake. Drenched in ruby grapefruit juice, you'll find it impossible to say no.
For those who are sweet enough, I have made a carrot & pineapple cake. Based on my (Cake.i.AM) original recipe, it is loaded with finely shredded carrots, crushed pineapple and Texas pecans from the store. With it being "un-frosted" (is that a word?) I can only describe this as naked, sticky, nutty and yum. Make of that what you will.
Of course, the little lid of happiness wouldn't be complete without bags of that Great British Classic: All Butter Shortbread.

The final for 2025 is rather like a , a cake.i.am wrapped, so to speak.
My most eaten cake of 2025 was….drumroll…..my Grapefruit drizzle cake. This, life-changing, I-must-shake-hands-with-the-baker-cake (which has happened on a couple of occasions). It's deliciously moist because it is drenched with freshly squeezed Texas ruby grapefruit
The second most eaten cake of 2025 was my Polish Apple cake (a recipe passed on to me from my ). As it is coming up to Christmas, I used the lucyroseapples in KelleyProduce. They have delicate pink marbling and are crisp, tart and tasty. It is still a deliciously moist cake layered with apples and spices.
And of course, the little lid of happiness wouldn't be complete without some all-butter shortbread. As it is the season, I have made cranberry-orange shortbread, and I remembered to take a photo! It’s a festive miracle. These tasty morsels are studded with cranberries and orange zest. Proper yum.

With it being next week, I thought I would bring a little bit of the holiday to the at .
There are some delicious TX available at the store, so I made some Pecan Pie Bars. I combined them with , brown sugar, cream and butter, to make a delicious topping on a buttery base, enabling you to carry a Thanksgiving classic wherever you go.
My super indulgent, Pumpkin Chocolate Swirl are back. They are still pumpkiny, chocolatey, gooey slices of delight, made with brown butter, for the nuttiness (without the nuts), and dark brown sugar. Still delicately spiced with , & and marbled with brownie.
Aaaaaaand, of course my crisp, buttery are nestled in the lid too.

Whilst there are still some at the store, I thought I ought to make more of my mouthwateringly delicious Grapefruit Drizzle Cake. This delicious, grapefruit zested sponge is still soaked in Ruby Grapefruit syrup, and is still (so I have been told). This may be the last time for a while, so get it whilst the going is good.
Secondly, as apple season is still going strong, I used the in and some in my Apple & Blackberry Crumb Cake. This deliciously moist cake is made with shredded apples and whole blackberries and topped with a streusel crumb.

The in provide the perfect texture and combination of sweet and tart for my Polish Apple Cake. Still a deliciously moist cake, layered with apples and (Reminder: Mixed Spice is the English version of ).
Second, there are some at the store, so I could not resist making my (customer review, honest 😉) Grapefruit Drizzle Cake. This delicious, grapefruit zested sponge is drenched in grapefruit syrup, creating a mouthwatering slice of cake. You really must try it, and if you already have, then you really must have it again.
