Whats for Lunch?
Orange Roughy Ceviche Tostadas!
I had the pleasure of visiting one of the restaurant today and check out what their chef does for their brunch menu.
Orange Roughy is known for their sweet white flesh (pause) but what’s cool is they have such a long lifespan over 150yrs! The versatility of this fish being used not only in baking or frying but in a simple lime and mango ceviche really makes it pop out!
Excited to see what the rest of the menu consist of, but me being a seafood ju**ie I had to try!

What an amazing weekend at hanging out with my smoke fam! brought me out to assist him in some “light work” but in reality he wanted to put me in a position of success to not only collaborate but continue growing with folks. leads the way.
Next thing you know I’m on stage as one of the featured Pitmasters and ended up on stage with 🤣
Huge shout out to in always hooking us up with the best of the best and even test their new prototype! I love that team! If you’re not smoking or cooking on M&M you’re not winning.

Black Forbidden Rice Risotto with Shiitake Mushrooms cooked with a medium bodied Cabernet based broth garnished with fresh basil and aged Parmesan.
The Black rice approach is a much longer process because of the starch and fiber difference from traditional rice like Arborio. But
the end result gives you a nuttier, and visually striking result. Pairing it with mushrooms just gives it an amazing finish.
Inspired by one of my favorite chef’s Alex Trim approach!
