Directions:
Preheat oven to 375°F (190°C). Grease and flour a 10x15-inch jellyroll pan.
In a mixing bowl, sift together flour, baking powder, baking soda, cinnamon, cloves, and salt. In a separate bowl, beat eggs and sugar on high speed for 5 minutes until thickened. Add pumpkin and lemon juice, mix well.
Gradually add dry ingredients into pumpkin mixture, stirring just until combined. Spread batter evenly into prepared pan.
Bake for 12-15 minutes or until the cake springs back when lightly touched. Immediately turn cake onto a clean kitchen towel dusted with confectioners' sugar. Peel off parchment paper, and roll cake up in the towel, starting with the short end. Cool completely on a wire rack.
In a mixing bowl, beat cream cheese, butter, confectioners' sugar, and vanilla extract until smooth. Carefully unroll cake; spread filling evenly over cake to within 1 inch of edges. Roll up again.
Cover and refrigerate for at least 1 hour before serving. Dust with confectioners' sugar before slicing.
