I’m not sure I ever anticipated something not “local” to make it to my page. However, I too can be surprised from time to time. As committed as I am to supporting the local scene, I can’t omit noteworthy food and good people.
Recently, I was invited by to help shoot some BTS content for him for a collab he was doing with and .
Shortly after meeting owner aka “G” of Staten Island and his team, I was able to hear about the hard work and dedication he’s put into this concept. Learning about their in-house bread program producing iconic sesame hoagies to their unique way of making a cheesesteak their way and finally the stories of mom and grandmothers recipes making it onto the menu. No cutting corners, just doing it their way, every time.
While I haven’t had the pleasure of trying some of the more iconic cheesesteaks of the world, I’ve definitely had my fair share. I can safely say, it was one of/if not the best I’ve ever had. The 🥖 had the slightest crunch protecting a soft chewy interior. The steak cooked just a little longer for a crispy sear and the Cooper Sharp layered on for intense cheesiness.
If that wasn’t enough, we each had a vodka parm that blew my socks off. Having to stop and save some for my better half was the hardest thing I’ve done recently.
G and his story about growing this shop after everyone questioned him opening it in the first place is a story worth sharing just as much as a local spot to me. Each store he’s opened since the first is ran by a friend of his. Growing and telling his Staten Island story for everyone to hear.

Things you expect get at a liquor store - Tito’s, Jack, seltzers, etc.
Things you can get inside this liquor store - brisket, Lao sausage, incredibly crispy chicken wings, crack sauce, sticky rice, beef sticks and even more Cambodian style bbq.
has been telling me about for months. So we met up and I finally got to try it.
Within minutes of opening, the place was packed. Working with two grills and a couple fryers, the couple worked diligently to get plates out.
We ordered the wings | brisket ribs and Lao sausage plate | beef sticks | shrimp rolls | and some sticky rice. Now this isn’t traditional bbq slices of brisket; this is sliced pieces grilled over an open flame like all of the other proteins packed with flavor. The wings come as full wings, crispier than anything you can imagine and one of the best I’ve had. The beef sticks and Lao sausage both get kissed by the open flame providing the perfect contrast in textures. Take either one of those, a little bit of sticky rice and dip it in their crack sauce (similar to a jeow som) and you’re in bbq heaven.
If you’re looking to try something new, and you should be, I recommend you get here fast.

Oh no! Another pizza post.
I’m not sure how many times will be available to the public, but I do know that when the chance presents itself you’d be a fool to miss it.

Still crazy to me, some of the best pizza in DFW is coming from a dude who cooks almost exclusively in his home kitchen.

I don’t know if you know, but the Fort Worth location is easily the most family friendly restaurant around. 

You also may not know that , and the entire Zoli’s team have put in countless hours to dial in their 18” NY Style pie. 

Finally, you may think you don’t like the idea of a brunch pizza, I mean hell, I thought I didn’t. But, when you think about it… it’s just the simplest way of eating breakfast. All your favorite things atop an impeccable dough, with a side of syrup for dipping. 

I say all that to say… the 18” pie from Zoli’s is easily one of my favorite currently. I keep specifying the size because it’s important to note that a traditional NY pie is considered the industry standard and something about it just makes it that much better. So I guess…. size does matter. 

If you’re sitting around and thinking about how great it would be to get your feral children out of the house whilst enjoying elite pizza, then I can only suggest you visit the Fort Worth Zoli’s location. 

If you’re kidless and you really just want an incredible pizza, then you can visit Fort Worth or Addison.
Oh yeah, and the sandwiches are worthy of all the same love.

We’ve been going to since May of 2022, which still feels a little unreal to say out loud. It honestly baffles me that I was the one who wrote the very first article about them. Time has a funny way of sneaking up on you when a place quietly becomes part of your rhythm.
Recently, and I were talking after I commented again on a post about them needing a cook. He joked, “At this point, I may just hire you.” I reminded him quickly that I possess exactly zero cooking skills and would contribute nothing beyond poorly timed and often inappropriate jokes. Hard pass.
But what he did share stuck with me. Their location continues to be a challenge when it comes to finding passionate cooks. Denton. And I get it. If this place were in Dallas or Fort Worth, he’d probably be batting people away. Add a commute into the equation and suddenly people hesitate. I mean, I drive two to three hours round trip, at least once a quarter, just to eat there and I’d go more often if life allowed. But, yeah, it’s a far drive.
What I think gets lost on someone looking is the why. This isn’t just another cook position. It’s a role inside something genuinely special. Ben has been our server since day one, and on one lucky visit we were taken care of by . In this industry, building something that keeps people around that long is rare. That kind of consistency doesn’t happen by accident.
Sure, you can find great food in Dallas or Fort Worth, plenty of it. No disrespect there. But not many places leave a feeling behind. Not many have a heartbeat. Not many linger with you long after the plate is cleared. Osteria does.
So if you’re a cook, or you know one, looking for a place to grow, to belong, and to spend real time with, my advice is simple: go eat there. Sit down. Have the experience firsthand. Let the room, the food, the people do the talking.
Then make your decision.

Everyone’s choosin’ Texas… BBQ.
Fusion continues to grow and grow. Pitmasters Phong and Hong add their twist on this Viet-Tex spot in Houston.
The boys and I had to check it out. Formerly in a small spot near a gas station, they quickly outgrew it and found themselves among the most recent Top 50.
With specials like Brisket topped bbq fried rice, larger than life smoked chicken quarters and unique sides. We did our best to cover the whole menu.
Getting things like “poor man’s Mac”, a deeply flavorful chili, house sausages, a pleasantly sweet pulled pork and noteworthy ribs.
I could have and should have eaten all of the ribs and sausage. Both overwhelmingly impressive, rich in flavor and texturally flawless. The poor man’s Mac surprisingly was my favorite between the two Mac’s adding just a touch of sweetness for balance. The fried rice was everything I wanted and worked well when paired with their traditional or gold sauces. The skin on the chicken was tight securing something of the juiciest bites of chicken I’ve had in months.

Welcome to the Beef Lounge.
Where the focus isn’t accoutrements, a bevy of craft sides or anything else we’ve come to find around new school BBQ. While there is nothing wrong with any of those, Butch wanted to take it old school. 

What is old school? Direct heat, different cuts than we’re used to these days, coarse sausages and recipes dating back to the 1800s. had their first pop-up this weekend where a focus on the simpler central Texas BBQ style shifts away from the modern craft BBQ that we’re familiar with.

A protein heavy menu serving beef spares, brahman hump, pork chop, pork steak, and Alabama pork ribs. In addition to the direct heat meats, was a trio of smoked sausages. All paying homage to their roots, Halletsville, Schulenberg and the Elgin Hot Gut. Each one coarse, snappy and perfect on a cracker topped with cheese, kraut and sauce of choice.
The tray was a textural masterclass. Salt, pepper, smoke, vinegar and sweetness here and there. 

Bringing it all together was small cups of carrot raisin de-lite, German potatoes, old school chunky applesauce, stewed sauerkraut, crackers, onion, jalapeño/garlic, avocado, sticks of cheddar and rye.
It was nice to eat a nostalgic style of BBQ that I surely didn’t get to appreciate enough as a kid making trips to ETX.
