This installation proved to be one of the coolest art immersives I’ve been to.

This area has some incredible spots and Tacos El Gordo • H Street tops the list for their pastor mulita (a must have when you go) and tacos.

This restaurant does get lines out the door at all hours of the day, but they go quick, so don’t be intimidated.

You need Tacos El Gordo on your next .yoself adventure.

Not too many bands try to cover the most technical guitar players of all time: but… does!

In my pursuit to get a t-shirt from the City of St. Charles, Illinois Government for the in the town app, I visited

Every beer I tried was as good as the last. I had three different and they were all solid.

The happy hour menu was still going while I was there (between 4-6, Monday - Thursday), so I grabbed some pretzel bites and the HH burger.

The bar area had a lot of people at it, so I had some quality conversations with the folks around me. The bar staff were super friendly, so this was a great spot to post up and hang out.

Riverlands Brewing Company was a real treat. Not only are their beers great, but the space is a very functional gathering space with a great outdoor patio.

There was a food truck The Curious Crow slanging a great assortment of food. Everyone was eating and enjoying the fantastic weather.

I was able to find some friendly strangers to play some bags with, enjoy three different and listened to a heavy playlist that made me nostalgic.

I went over to see the show. She brought great energy and the crowd was dancing/enjoying themselves.

There was quite a bit of crowd participation during the show, which made the crowd go wild. Free jewelry to the winner of the twerk contest, one lucky concert goers danced on stage with - it was a fun time!

My Mom always says “low and slow”. In the slow cooker, this sauce is made on low for about 8 hours.

No cutting corners. 7-8 hours. Luckily it is a set it and forget it recipe when you cook it in the slow cooker, so it’s not as high maintenance as a stovetop sauce.

To replicate my Mom’s recipe here is what you need:

1 lb. - 1.5 lbs ground beef (salt/pepper)
1 sweet onion (diced)
3 cloves of garlic (minced)
2 tbs. sugar
2.5 tablespoons Olive Oil
2 tsp Oregano/Italian Spice Grinder

2 large cans of San Marzano tomatoes (it’s important that you use San Marzanos)
1 large can of tomato paste
1 large can of diced tomatoes
3/4 cup Red Wine
Parmesan Cheese

1 box pasta noodles

Quick Recipe:

Turn slow cooker on low
Add all cans in and the wine
Add sugar

Dice onion
On the stove top, add 1 tsp olive oil to cook onions (5 mins), remove onions from pan onto plate. They’ll be added back in after you start the meat.

Put meat in pan and grind salt and pepper in. Cook about 8 mins on medium heat and add onions back in (mix together).

Cook until meat is browned and in the last :30 seconds of cooking, add in garlic (cooking until fragrant) and turn off heat.

Drain any fat out of the pan and add onion/meat mixture into crock pot.

Mix all together, add Italian spices and cover. Cook on low for 8 hours checking ever 2-3 hours (stir each time you check it)

15 minutes before the sauce is done, put pasta in boiling water to cook to Al dente (use box instructions for pasta Al dente). Add salt to the water. Once you strain the pasta, throw back in cook pan and use small amount of olive oil (1/2 tbs) so the noodles do not stick. Toss noodles with tongs.

Once sauce is complete, put the noodles on the plate, put sauce over it, and add Parmesan. Guess what..you have officially made my Mom’s sauce, congrats!

Have you ever been to in ? It’s a no frills mountain that resides only 2 hours away from .

I booked my lift ticket ahead of time online and decided to try snowboarding for the first time. The ticket came with a free 2 hour experience lesson, since it was my first time attempting to snowboard.

If you want to try a cool new mountain out, get out to Arizona and check in. It’s a great place to go in groups or to .yoself.
