Since Surf n’ Turf is already taken, what should we call this?
Cluck n’ Claw?
Tail Feather?
Either way… it was amazing. Chicken breast seasoned with a combination of Soon-to-be-Famous and Osmo Golden Gourmet by .digiovanni . Lobster tails seasoned with Osmo GG and . Grilled on a ripping hot Traveller and served with roasted baby potatoes and a Caesar salad.

Grilled on a ripping hot Weber Grills Traveller and served with roasted baby potatoes and a Caesar salad.

Picked up some prime NY Strips from . Sous vide at 133° for 6 hours and then seared in a ripping hot . Served with baked potatoes, sautéed mushrooms, and Caesar salad.

Jacob is becoming a HUGE help around the house. Here he is loading the dishwasher after breakfast. HIS breakfast. The rest of us are still eating. He WILL take your plate while food is still on it if he determines that you’re done.

Tried something new tonight. Grilled Barramundi. Seasoned with Soon-to-be-Famous and Blackened (because why mess with perfection). Grilled it on a ripping hot Traveller using some to focus the heat and served with rosemary parmigiana baby potatoes and a lobster avocado salad. That’ll do.

Jacob started training in a co-op between his school and a local outreach retail shop. On top of learning BBQ, now he’s developing other marketable skills. He and his classmates are truly blessed by the leadership and passion that these teachers have for them.

Jacob’s class went on a field trip to the movie theater last week. It was a sensory showing in the auditorium that has a play scape inside. No wonder Jacob couldn’t remember what color hat Mario wears.

Surf n’ Turf for dinner tonight.
Flatiron steaks, seasoned with Soon-to-be-Famous and sous vide at 120° for 3 hours. Seared with on the Traveller. Served with grilled shrimp seasoned with Boudreaux’s Bayou and Hasselback potatoes.
