đRoasted Balsamic Strawberries & Creamy Feta Dip
Sweet, tangy, and irresistibly creamyâthis roasted strawberry & feta dip is the perfect balance of indulgence and freshness. A show-stopping bite for any occasion!
Ingredients:
⢠8 oz feta cheese
⢠4 oz cream cheese
⢠2 tbsp olive oil
⢠1 tbsp lemon juice
⢠Salt, to taste
⢠Pepper, to taste
⢠1 Ib fresh strawberries
⢠2 tbsp sweetener (or SF honey/maple syrup)
⢠1 tbsp balsamic vinegar
Instructions:
Preheat the oven to 400°F (200°C).
- For the roasted strawberries, slice the strawberries and place them on a baking tray.
Sprinkle with sweetener and drizzle with
balsamic vinegar.
-Roast in the oven for about 20 minutes until jammy.
- In a blender, combine feta cheese, cream cheese, olive oil, lemon juice, salt, and pepper.
- Blend until smooth, leaving some texture if desired. Once strawberries are roasted, serve them alongside the whipped feta dip with your favorite crispy bread or veggies. I like to top it off with pistachios for added crunch.

⨠Creamy Garlic Crab Stuffed Mushrooms â¨
Juicy mushrooms overflowing with tender crab, creamy garlic filling, and wholesome flavorâan irresistible healthy appetizer that feels indulgent but stays light.
Makes 12 servings
Ingredients:
12 large portobello mushrooms, stems removed and wiped clean
1 cup cooked crab meat, check for shells and shred the crab.
1/2 cup cream cheese, softened
1/4 cup sour cream
2 cloves garlic, minced
1/4 cup chopped green onions
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup grated Parmesan cheese
2 tablespoons olive oil or butter
Instructions:
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Clean the mushrooms with a damp paper towel and remove the stems. Set aside.
3. In a skillet over medium heat, add the olive oil or butter. SautĂŠ the minced garlic and green onions for about 2 minutes until fragrant and softened.
4. In a medium bowl, combine the cooked crab meat, softened cream cheese, sour cream, sautĂŠed garlic and green onions, paprika, salt, and pepper. Mix until smooth and well combined.
5. Fill each mushroom cap generously with the creamy crab mixture, mounding it slightly.
6.Sprinkle the grated Parmesan cheese over the filled mushroom caps.
7. Arrange the mushrooms on the prepared baking sheet. Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the tops are golden and bubbly.
8. Remove from the oven, let cool slightly, and serve warm.

Makes 4 - 1/4th cup Pumpkin Pancakes
Ingredients:
1/2 cup almond flour
2 tablespoons coconut flour
1 tablespoon pumpkin pie spice
1 teaspoon baking powder
1-2 tablespoon allulose
2 tablespoon Pumpkin puree
3 large eggs
1/4 cup milk
Instructions:
1. In a high-speed blender or food processor, add your almond flour, coconut flour, pumpkin pie spice, baking powder, allulose, pumpkin puree, eggs, and milk, and pulse until a thick batter remains.
2. Transfer your pancake batter into a bowl and let sit for 10 minutes to thicken. If the batter is too thick, add a little extra milk of choice.
3. Pre-heat your non-stick pan on medium heat, and spray it lightly with cooking spray. Once hot, 1/4 cup portions of batter. Cover the pan and allow to cook for 2-3 minutes, until the edges bubble and are slightly golden.
Flip, cover and repeat for 2-3 minutes.
Once cooked, serve immediately.

Broccoli Cranberry Bacon Salad
Ingredients:
8 slices center cut crispy bacon crumbled (optional)
1 large head broccoli florets , sliced into bite-sized pieces

cup diced red onion
½ cup freeze dried cranberries or you could use fresh blueberries
½ cup pistachios
Âź cup crumbled feta cheese
½ cup mayonnaise
Âź cup plain Greek yogurt
Dressing
1/4 cup plain Greek yogurt
1/4 cup mayo
1 to 2 tbsp Apple Cider Vinegarl
1 tbsp sweetener
Instructions: Super easy, just mix all ingredients together and serve. You can also make / keep the dressing on the side if you prefer.

This savory spinach, tomato, and Italian sausage recipe is a hearty, flavorful dish packed with protein, fresh veggies, and authentic Italian tasteâperfect for an easy, healthy meal.
Spinach Tomato & Italian Sausage Frittata
Ingredients:
3/4 pound ground Italian sausage
8 large eggs
1/2 cup cottage cheese
1/2 cup grated Parmesan cheese
1/4 cup Heavy Cream + 2 tbsp
1 tsp garlic powder
2 cups fresh chopped baby spinach
12 cherry tomatoâs halved (red & yellow)
2.5oz kalamata olives pitted & halved
3/4 teaspoon salt
Freshly ground black pepper
Instructions:
Preheat oven to 350 degrees F. Move oven rack to the second highest from the top. Coat a 10-inch oven safe skillet with cooking spray or 2 tablespoons avocado oil.
In a medium bowl, whisk eggs, cottage cheese, cream, parmesan, spinach, salt and pepper. Set aside.
Add sausage to a skillet, breaking it up in small pieces with a wooden spoon over medium heat and cook, until browned and cooked through, about 4 minutes. Drain.
Add the egg mixture to skillet with sausage and cook 1 to 2 minutes to let the bottom set. Add the olives and tomatoâs on top of mixture.
Bake in the oven until the top is set, about 16 to 18 minutes. With a spatula, carefully slide frittata out of the skillet onto a cutting board and cut into 4 wedges. Or you can serve it right out of the skillet. Enjoy đ
