Ingredients:
1 cup ricotta cheese
1/2 cup milk
1/3 cup vegetable oil
2 large eggs
1 cup all-purpose flour
1/2 cup almond flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup toasted almonds, chopped
1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 375ยฐF (190ยฐC) and line a muffin tin with paper liners or grease it lightly.

Refreshing Apple Cranberry Carrot Salad
Crisp apples, sweet cranberries, carrots, and mandarins in a creamy tangy dressingโrefreshing, easy, and perfect for any occasion!
Ingredients
1 red apple, cut into matchstick pieces
1 green apple, cut into matchstick pieces
2 tablespoons lemon juice
2 cups matchstick carrots
ยผ cup yellow onion, finely diced

cup dried cranberries, sweetened
ยฝ cup vanilla yogurt
ยผ cup mayonnaise
1 tablespoon sugar
ยผ teaspoon salt
ยผ teaspoon black pepper
1 cup canned mandarin segments, drained
Instructions
Prepare the Apples: Slice both the red and green apples into matchstick pieces. Place them in a bowl, pour the lemon juice over the apple pieces, and toss well to coat. Let the apples sit for about 5 minutes to absorb the lemon juice, which prevents browning.
Combine Ingredients: In a large mixing bowl, add the matchstick carrots, diced onion, and dried cranberries.
Add the Apples: After the apples have soaked in lemon juice, add them to the mixing bowl with the other ingredients.
Make the Dressing: Add the vanilla yogurt, mayonnaise, sugar, salt, and black pepper to the bowl. Stir everything together until well combined and evenly coated.

Ingredients:
1 ยฝ cups rolled oats
ยฝ cup shelled pistachios, chopped
ยฝ cup almond flour
ยผ cup coconut oil, melted
ยผ cup honey or maple syrup
1 tsp vanilla extract
ยผ tsp salt
ยผ cup dark chocolate chips (optional, for topping)
Instructions:
In a large bowl, mix oats, chopped pistachios, almond flour, and salt.
Add melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until the mixture is sticky and combined.
Press the mixture firmly into a lined square baking dish.
If desired, melt the dark chocolate chips and drizzle over the top.

Crockpot Parmesan Garlic Chicken Spaghetti
Ingredients:
3 boneless, skinless chicken breasts
1 cup chicken broth
1 tbsp olive oil
4 cloves garlic, minced
ยฝ tsp salt
ยฝ tsp black pepper
ยฝ tsp Italian seasoning
1 cup grated Parmesan cheese
1 cup heavy cream
1 jar (15 oz) Alfredo sauce
8 oz Spaghetti pasta (uncooked)
1 cup shredded mozzarella cheese
Fresh parsley, chopped (for garnish)
Directions:
Place the chicken breasts in the bottom of your crockpot. Pour the chicken broth over the chicken, and drizzle with olive oil.
Sprinkle the minced garlic, salt, pepper, and Italian seasoning evenly over the chicken.
Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot.
Stir in the grated Parmesan cheese, heavy cream, and Alfredo sauce.
Add the uncooked fettuccine pasta, stirring to coat the pasta in the creamy sauce.
Cover and cook on high for an additional 30-40 minutes, or until the pasta is cooked to your desired tenderness.
Once done, stir in the shredded mozzarella cheese until melted and creamy.
Garnish with freshly chopped parsley and serve.

1/2 CUP PASTA WATER (RESERVED)
SALT & BLACK PEPPER TO TASTE
EXTRA PARMESAN & LEMON ZEST FOR SERVING
๐ INSTRUCTIONS
๐ COOK PASTA: Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
๐ง SAUTร GARLIC & SPINACH: In a skillet, heat olive oil. Add garlic, cook 1 min. Add spinach, cook until wilted.
๐ฅฃ MAKE SAUCE: In a bowl, whisk ricotta, parmesan, lemon zest & juice, salt, pepper, and a splash of pasta water until creamy.

"Baked Pumpkin Pudding
INGREDIENTS:
๐ 1 can (15 oz) pumpkin puree
๐ 3/4 cup granulated sugar
๐ฏ 1/2 cup packed brown sugar
๐ฅ 2 large eggs
๐ฅ 1 1/2 cups whole milk
๐ฅ 1/2 cup heavy cream
๐ฟ 1 teaspoon vanilla extract
๐ฐ 1 teaspoon ground cinnamon
๐ฅ 1/2 teaspoon ground ginger
๐ฐ 1/4 teaspoon ground nutmeg
๐ฟ 1/4 teaspoon ground cloves
๐ง A pinch of salt
๐ฆ Whipped cream (optional, for serving)
INSTRUCTIONS:
1. Preheat your oven to 350ยฐF (175ยฐC) and lightly grease a 2-quart baking dish or multiple small ramekins.
2. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, and eggs until the mixture is smooth and well combined.
3. Slowly add the whole milk, heavy cream, and vanilla extract to the pumpkin mixture, stirring continuously until evenly blended.

Ingredients:
1 cup all-purpose flour
2 large eggs
1 1/2 cups milk
1/4 cup ricotta cheese
1/4 cup almond flour
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Butter or oil for cooking
Instructions:
1. In a mixing bowl, whisk together the flour, eggs, and milk until smooth.
