Funny story - Sugar our river otter was always playing with and flipping over the water bowl in her yard so the otter keepers decided to use a large barrel of water that she would not be able to turn over. Now as you can see, it has become one of the otter's favorite places to hang out and play. Sometimes you can even see both the otters in the barrel at the same time!

BOW TIES with SUN DRIED TOMATO CREAM SAUCE

INGRIEDIENTS for 4:

1 16 ounce package bow ties
6 ounces jar oil packed sun dried tomatoes
1 garlic clove
1 cup whipping cream
¾ cup chicken broth
¾ cup Parmesan cheese
Salt and pepper taste

Optional Garnish: Fresh chives, basil, or walnuts

DIRECTIONS

Cook pasta according to package directions and drain.

Drain the tomatoes. Save the oil as it can be used another day to make a delicious salad dressing

Cut the sun-dried tomatoes into strips or a dice. Set aside.

Pour the cream into a pan over medium heat and bring to a boil – or when you tiny bubbles form around the edge of the pan.

Lower the heat and simmer until the cream reduces by about one-third.

Remove the cream from the heat source and press in the garlic. Mix and let sit for 10 minutes.

Return the cream to the heat and add the chicken broth and bring to a simmer. Cook for a few minutes.

Add the Parmesan cheese a couple tablespoons at a time and mix into the sauce until you achieve the consistency you wish.

NOTE: This is not a thick sauce. However, if the sauce is too thick add a bit more chicken broth. Add more cheese if too runny.

Mix in the sun dried tomatoes.

Serve over the pasta.

Garnish with chives or sliced basil if you wish.

Serve with more Parmesan cheese at the table.

SAUTEED BABY BOK CHOY with SH*TAKE MUSHROOMS

The first time I bought bok choy it was an impulse buy. I did not really know what to do with it. So I just sautéed it in some soy sauce.

I really like bok choy, so for many months I tried many ideas.

The recipe I share with you today is the culmination of that playing with my food.

INGREDIENTS PER PERSON

2 baby Bok Choys
1-2 tablespoons vegetable oil
1-2 cloves garlic
4-5 Sh*take mushrooms per person
Soy sauce
Brown rice
1 green onion per person
Sesame seeds

THIS IS WHAT YOU DO:

Start the rice first following the directions on the box for the number of people you are serving.

Cut about one-half to one inch off the bottom of the bok choy.

Separate the leaves and wash well.

Slice the garlic.

Slice the mushrooms.

Slice the green onions on the diagonal.

Heat the oil over medium to medium high heat and add the garlic. Stir until fragrant about 15-20 seconds. Do not burn.

Add the bok choy stirring often till crisp-tender and slightly wilted, about three minutes. Watch the garlic. You do not want it to burn.

Add the soy sauce and the mushrooms and sauté another minute or two.

Place some rice on a plate and top with the green onions and some sesame seeds.

Place the bok choy and mushrooms next to the rice and dig in.

Perfect for these hot and humid August days.

Ravioli with Pan Roasted Tomatoes

This is what you need for 4 people”

1 pound fresh or frozen cheese ravioli
3 - 5 tablespoons butter
1 pint cherry or grape tomatoes
3 cloves of garlic
1 large shallot diced
¼ cup fresh basil
1/3 cup Parmesan cheese, shredded
Salt and pepper to taste

Here is what you do:

Wash the tomatoes.

Press the garlic, dice the shallot, and tear the basil into small pieces if you do not find small basil leaves.

Bring large pot of salted water to boil. Cook ravioli according to package instructions. Drain.

While ravioli are cooking, melt butter in large skillet over medium-high heat. Add the diced shallots and tomatoes and season with salt and pepper.

Cook the tomatoes until their skins split, about 4-6 minutes, shaking pan every few minutes to rotate tomatoes.

Add garlic and cook for 1 minute more.

Add the drained ravioli and toss until combined with tomatoes.

Serve immediately with Parmesan cheese and fresh basil.

Rainier Cherry Salsa for Pork Chops

This is what you will need for 3-4 people:

3-4 pork chops
1 pound fresh Rainier Cherries
3-4 shallots
2 tablespoons champagne vinegar **
1 tablespoon grapeseed oil
Parsley for garnish
Salt and pepper to taste

** for a sweeter salsa use Raspberry Vinegar.

Here is what you do:

Wash, pit and slice the cherries.

Peel and slice the shallots, cutting out any yellow or green pieces in the shallot.

Combine the cherries, shallots, vinegar, and olive oil in a blow and gently mix well.

Add a bit of salt and pepper if desired.

Lightly cover and chill in the fridge for 2-3 hours.

Fry, grill, or broil your chops. I fried mine in some EVOO with just some salt and pepper.

Chop the parsley.

Place chops on a plate and spoon some of the salsa on top. Garnish with some parsley.

Voilà, Instant gourmet!!!!!!!!!
