Did you know that you can make jelly out of store bought or freshly made juice. You can get the juice from anywhere and even most food pantries have it on hand. Which would come in handy right now with school being out.

The Master Juice-to-Jelly Recipe

This method works for almost any standard store-bought juice (like grape, apple, cranberry, or pomegranate).

Ingredients & Gear

4 cups of juice (100% juice with no added sugar works best)
1 package (1.75 oz) of powdered regular pectin
4.5 cups of granulated sugar
1 to 2 tablespoons of lemon juice (adds necessary acid to help the pectin set)

A large stockpot (the mixture will foam up significantly as it boils)

The Process

1.Combine juice, pectin, and acid:
Prep stage.

Pour your 4 cups of juice and lemon juice into a large pot. Whisk in the powdered pectin until it is completely dissolved and no lumps remain.

2.Bring to a full rolling boil:First boil.Place the pot over high heat. Bring the mixture to a full rolling boil—this means a boil that cannot be stirred down or stopped when you stir it with a spoon.

3.Add the sugar quickly:The sweet spot.Once boiling, dump in all 4.5 cups of sugar at once. Stir vigorously to dissolve the sugar completely.

4.The hard boil countdown:Exactly 1 minute.Bring the mixture back to a full rolling boil. Let it boil hard for exactly 1 minute, stirring constantly. Timer accuracy is crucial here for a proper set.

5.Skim and jar:Finishing touches.Remove the pot from the heat. Use a metal spoon to skim off any white foam from the surface. Pour the hot liquid into clean jars, leaving about a 1/4-inch of space at the top.
