Huge thank you to Mr. Hu Chuan-an for his review of Hanami. His sister and nephew are longtime regulars at our restaurant; now, he brings his expertise in East Asian cuisine all the way from Taiwan. Read the translation of his review below:

"Master, where did you learn Japanese cuisine?" I asked.

"I learned from Japanese people in New York. It was incredibly tough!"

I traveled from Taiwan to visit my sister and nephew in New Haven, about two hours from New York. My sister took me to a very famous Japanese restaurant in the New Haven County. The owner, Lin, has ties to Taiwan, but has been in America for over thirty years.

I observed his knife skills, his handling of the fish, and the attention to detail at the counter—it was all the result of Japanese training.

He even served me golden eye snapper sashimi and the head of a red snapper. These are flavors the layman may not understand in depth, but those with experienced palates may appreciate.

The owner's skill lies in his ability to prepare whole fish, giving the best parts to the customers who prefer them—that's the core spirit of sushi!

Moreover, most of the fish here comes from the North Atlantic, different from what we usually eat in Japan and Taiwan. Even with the same fish, the texture and taste are completely different, the sweetness is entirely unique; eating it is like stepping into another world.

My sister married into this area, and my nephew has been eating at this restaurant since he could walk. He absolutely loves Japanese food, especially raw Japanese food—he says it makes him feel like he's in heaven! I guess that's just part of the Hu family bloodline!

My sister gave the owner a copy of my book, "Traditional Japanese Cuisine", and he keeps saying he's a fan. I told him I'd take him to check it out when he goes back to Taiwan!

Even when visiting relatives, I still have to do research—that's what makes my job so tough!
