🌶️🫑 PEPPER HARVEST CHEAT SHEET

One of the best things about growing peppers is that you don’t always have to wait for them to change color before harvesting.

Most peppers can be picked once they have reached a usable size and feel firm. A green pepper is often simply a pepper harvested before it reaches its mature color.

🫑 SWEET PEPPERS

Bell peppers and many other sweet peppers can be harvested while green. At this stage they tend to have a crisp texture and a fresher, less sweet flavor.

Leave them on the plant longer and they may mature to red, yellow, orange, purple or another color depending on the variety. As sweet peppers mature, their flavor generally becomes sweeter and richer.

🌶️ HOT PEPPERS

Many hot peppers can also be harvested green or allowed to mature to their final color.

A green jalapeño is a perfect example. It’s completely harvestable while green, but if left on the plant long enough it usually ripens to red.

Heat can change as hot peppers mature, but variety and growing conditions also play a major role, so color alone isn’t a perfect measure of how hot a pepper will be.

✂️ WHEN SHOULD YOU PICK?

Look for peppers that have reached a good size for their variety and feel firm. Harvest regularly throughout the season so the plant can continue putting energy into developing its remaining fruit.

Use clean scissors or pruners rather than yanking peppers from the plant. Pepper branches can be surprisingly easy to break.

And remember, you don’t have to choose between green and fully colored peppers for the entire plant. Harvest some early and leave others to ripen so you can enjoy both stages.
