2) Cooking destroys it: High heat causes iodine to vaporize. If you add salt at the beginning of cooking or boiling your food, a massive chunk of that iodine disappears before it ever hits your plate.
3) Bioavailability matters: The synthetic potassium iodide added to table salt isn’t always efficiently absorbed by your body compared to the natural, bioavailable forms of iodine.

The need for iodine increases during pregnancy because the growing baby takes iodine directly from the mother to develop their own brain and nervous system (Ma, 2016).
