Our Raspberry & Meyer Lemon Swiss Roll leans into the precision of classic French pâtisserie: a delicate chiffon sponge wrapped around raspberry whipped cream, finished with Meyer lemon and cardamom foam, pickled blueberries, and freeze-dried raspberries. Light, bright, and just tart enough, it’s designed to leave the meal on a fresh note rather than a heavy one.

Sweet raspberries, floral citrus, warm spice, and a little pop of acidity in every bite. Exactly how summer dessert should feel. 🍋🫐✨

Sablefish isn’t cod. It just got stuck with the name.

It’s a deep-sea fish that behaves like a trick of physics — enough fat that it stays silken over binchotan, where most white fish would tighten up and go dry. We let the char happen anyway. Skin crisp, center still giving.

Underneath: heirloom tomatoes from Nichols Farm, cooked down with Kalamata olives and anchovies that never announce themselves — they just make everything taste more like itself. On top, the same olives, dehydrated until they shatter. Same ingredient, opposite texture, on purpose.

Chives and parsley at the end, because richness this quiet still needs a little air.

It reads coastal. It eats like Provence remembered why tomatoes exist.
