Every day we mix our dough using high-gluten flour, water, salt, yeast and malt. For our cinnamon-raisin bagel we use brown sugar. The bagels are then proofed, refrigerated 24-36 hours before being kettle-boiled, hand-dipped in seeds, and baked.
It’s a painstaking process, but it is the only process. This is the NY bagel which my brothers, Andy, Pete, Steve and I brought to Chicago in 1983.
Take out a bag with our house-made cream cheese, or we will make a sandwich for you.
