Ultimate low and slow 17 hour huge pastrami brisket from @wichitapacking ‼️ 17 hours of smoky woodfired perfection @traegergrills 🔥 This 15+ lb pastrami brisket went low & slow at 225°F with hickory wood pellets on the Traeger, then wrapped in butcher paper at 174°F, and taken all the way to a juicy 206°F. ✨ After a 2-hour rest, sliced thinly and turned into the sandwich of dreams: Toasted buttered @pepperidgefarm swirled deli rye, @clevelandkitchen garlic sauerkraut, yellow mustard, @tillamook Swiss cheese & lots of layers of tender, flavorful pastrami.
