Postcard from Mexico 🇲🇽
Last weekend, our team had the pleasure of visiting some of our partners down in Mexico, and we need to share!
The conversations, the pours, the food, honestly everything was great! The hospitality made us feel right at home.

Peach Basil Smash 🍑🌿
Sending off summer with this one. The Peach Basil Smash is bright, silky, and basically summer in a glass.
The Cocktail
Peach Basil Smash
* 2 oz Rowan’s Creek Bourbon
* ¾ oz fresh squeezed lemon juice
* ½ oz Rothman & Winter Orchard Peach
* ¼ oz 2:1 demerara syrup
* 3 dashes Bittercube Orange bitters
* ½ oz egg white
* 2–3 peach slices
* 3 medium basil leaves (plus a couple extra for garnish)
Build:
1. Gently muddle the peach slices and 3 basil leaves in your mixing tin.
2. Add the remaining ingredients.
3. Dry shake (no ice) vigorously for 15 seconds.
4. Add ice and shake for another 8 seconds.
5. Double strain over a large cube.
6. Garnish with a couple fresh basil leaves.
The Pairing
This one drinks great alongside a simple Burrata Salad:
* Heirloom tomatoes, sliced and quartered, finished with flaky salt
* Half a pouch of burrata, sectioned
* Fresh basil leaves scattered throughout
* A generous drizzle of good olive oil and good quality balsamic
Bonus tip: a few quartered peach slices tucked into the salad take this pairing to the next level.

We’re kicking things off Thursday with a double header. Vermouth & Amaro tasting at Binny’s Lincoln Park starts at 5:30pm, and Kenny Coleman is posting up in the Red Door Whiskey Room for Pursuit @ Bitter Pops from 5 to 8pm. Bitter is better, and whiskey is whiskey so come thirsty.🥃
Later in the month, the Indie Spirits Expo hits on the 28th. It’s the largest gathering of small, independent, family owned distilleries and brands, so if you love finding stuff you can’t get off a regular liquor store shelf, this one’s for you.

What a weekend at Brewzlefest 2026!
A big thank you to our partners, Barrell Craft and Dark Arts, for the great conversations and even better pours. Always a pleasure spending time with you both outside of the usual day-to-day.🥃
We also made some excellent new connections throughout the event and are looking forward to seeing where those relationships go.
Thank you to the organizers and everyone who put this event together. It was a pleasure to be a part of the Craft Whiskey Collective team. Events like this are a great reminder that crafting connections is what it’s all about.
