Want to remove the bitterness from eggplant?

Liberally sprinkle salt on both sides of cut eggplant in a colander, cover with a plate and something heavy (like a can) for about 15 minutes, a quick rinse and pat dry, season with your favorites and olive oil, grill until ALMOST tender, a kiss of herbs from your garden (or elsewhere), and voilà!
