What if a beverage could engage all the senses: sight, sound, smell, temperature, and taste?

Since 2011, we’ve created hundreds of original cocktails. We’ve made drinks inside of ice. We’ve used time as an ingredient. We’ve experimented with pressure, heat, and evaporation to transform what a drink can be.
We're honored to be recognized among the best—by the James Beard Foundation for Outstanding Bar Program in the US, Chicago Magazine's Best Bar in Chicago, and Esquire's Best Bars in America.

A new spring addition to our 5-Course and Kitchen Table menus. For this cocktail, we’ve bottled a carbonated blend of vodka, lemongrass, and tonic which is then poured tableside over cucumber ice pearls to create our take on a Vodka Tonic.

The Vacpot
An excerpt from The Aviary Cocktail Book, pg. 198:
"It was a fortuitous moment, then, when we discovered the vacuum pot (sometimes also referred to as a 'coffee siphon'). An elegant and visually arresting device, the vacuum pot (or "vacpot", as we refer to it here) also happens to serve a functional purpose as a method for brewing coffee. It seemed an obvious question to ask ourselves, "Can we serve a cocktail in that thing?'"
