Jess usually prefers not to dip *any* food in any kind of sauce or condiment. On rare occasions, such as this one, we are able to encourage her to give it a try. She enjoyed these chips with a *tiny* bit of salsa! 😁

Weekends are for cooking! 😁 In addition to our usual biscuits and gravy, yesterday we made smash burgers with sourdough bread and homemade fries! The meal was so good I couldn’t stop eating it to get pictures 😅. What have you been cooking this weekend?

It’s my birthday! I was so shocked and happy when I arrived back to my surprise party with friends and family! ❤️ I also learned that I share a birthday with Elmo! 😂

Snow!! It so rarely snows around here, that even just a small amount like this is quite magical! Lots of you may ask if Jess likes the snow, and the answer is a definitive NO 😬. It makes her anxious that the roads may be too icy to drive on, therefore interrupting plans and everyone’s regular routine.

We are always working on independence in the kitchen. This morning, Jess made grits, and she can do quite a bit of it herself. She can tear the package and pour the grits in the bowl, stir the grits, put them in the microwave and start it, and get them out. The parts she needs help with are measuring the water and pouring it in the bowl, and getting the exact right amount of time on the microwave. She's doing great and constantly making progress!

We tried something new! Have you ever had one of these Velveeta skillet meals? We’ve done hamburger helper before, but never one of these. Jess and I both loved it!!
Let’s talk about sensory processing. If you’ve been watching a while, you’ll know that Jess has sensory processing disorder. Part of that for her is struggling to touch certain things, and a BIG part of it for her is the drive to avoid getting her hands dirty! She has come so far in recent years especially with being able to touch and partially crack eggs. We used farm fresh eggs so we washed them before using them, and I didn’t think to let her know that first - so you can see her start to worry/wonder about that after she touches the first one. Then, when she accidentally touched the cake batter, we were so proud of how she handled that! She stopped, asked for help, and then was able to continue directly after washing her hands 😁
